Description

These Apple Vanilla Muffins are a delicious pastry for autumn. With juicy apples and a creamy buttercream, they are a perfect dessert or a delicious snack in between. The preparation takes about 65 minutes and yields 12 servings. Ideal for brunch or as a sweet treat in the afternoon.

Ingredients (17 ingredients)

  • 250 ml Milk
  • 240 g Sugar
  • 0.5 packet Vanilla pudding powder
  • 225 g Flour
  • 125 g Soft butter
  • 0.5 tsp Cinnamon powder
  • 200 g Apples
  • 40 g Tender rolled oats
  • 0.5 packet Baking powder
  • 2 piece Eggs
  • 150 ml Oil
  • 175 g Buttermilk
  • 50 g Flour
  • 25 g Butter
  • 20 g Sugar
  • 0.25 tsp Cinnamon
  • 100 g Butter

Preparation (10 steps)

Prepare crumbles

Put 50 g flour, 25 g butter, 20 g sugar and 1/4 tsp cinnamon in a bowl and knead with your hands to form crumbles. Put in the refrigerator.

Cook pudding

Add 200 ml milk and 20 g sugar to the mixing bowl and bring to the boil for 5 minutes/100°C/speed 1.

Complete pudding

Mix 1/2 packet of vanilla pudding powder with 50 ml of cold milk and add to the mixing bowl. Simmer for 1 min./100°C/speed 2. Cover with foil and let cool.

Prepare apples

Preheat the oven to 180 degrees (convection oven 160 degrees). Place paper liners in the wells of a muffin tin. Peel, quarter, core and cut 200 g apples into thin slices with the Wundermix WunderSlicer V2 and the fine slicing disc. Place the WunderSlicer V2 on the mixing bowl lid and feed the apples through the opening. Collect the cut material in a bowl.

Prepare dough

Add 175 g flour, 40 g tender rolled oats, 1/2 packet baking powder and 1/4 tsp cinnamon to the mixing bowl and mix for 10 sec./speed 4.

Mix liquid ingredients

Add 2 eggs, 200 g sugar, 150 ml oil and 175 g buttermilk to the mixing bowl and whisk for 20 sec./speed 4.

Complete dough

First add the flour mixture, then the apples to the mixing bowl and stir in for 15 sec./reverse/speed 3.

Bake muffins

Pour the dough into the molds. Bake muffins in the oven for 5 min. Remove and spread the crumbles on the muffins. Bake for another 20 min. Let cool.

Prepare buttercream

30 sec/Speed 4

Add 100 g butter to the mixing bowl and stir until creamy for 30 sec./speed 4. Stir in pudding spoon by spoon.

Decorate muffins

Use a knife to cut off the part of the muffins that protrudes beyond the molds. Spread buttercream flat in a circular motion on the bottom parts. Place the top parts on top. Serve dusted with powdered sugar if desired.
