Description

This rice-vegetable composition is a real all-rounder! I like to make it when I need to be quick and I still have vegetables in the fridge. The rice becomes fluffy and aromatic, the vegetables crunchy and the cream cheese provides a creamy texture and a mild taste. The curry and cumin notes give the dish a slightly oriental touch. Perfect as a light lunch or dinner, it can also be prepared well in advance and enjoyed cold. A great vegetarian dish that will also convince meat eaters!

Ingredients (11 ingredients)

  • 250 g Rice
  • 1 piece Bell pepper(s)
  • 300 g Peas frozen
  • 300 g Carrot(s)
  • 2 piece Onion(s)
  • 150 g Cream cheese
  • 3 tsp Curry
  • 1 tsp Ground cumin
  • 2 tsp Broth instant
  • Salt and pepper
  • 250 ml Water

Preparation (7 steps)

Cook rice

Put 250 g rice and 2 tsp broth instant into the simmering basket. Fill 1 liter of water into the mixing bowl, insert the simmering basket and cook for 20 min./100°C/speed 4.

Chop onions

Put 2 onions into the mixing bowl and chop for 3 sec./speed 5. Scrape down the side with the spatula.

Sauté onions

Add some oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1. Add 1 tsp curry powder.

Add vegetables and simmer

Add 300 g coarsely grated carrots and 1 bell pepper(s) cut into pieces together with 250 ml water to the onions in the mixing bowl and simmer for 10 min./100°C/speed 1.

Add peas and continue cooking

Put 300 g peas frozen into the mixing bowl and cook for another 5 min./100°C/speed 1.

Add cream cheese and spices

Add 150 g cream cheese, 2 tsp curry, 1 tsp ground cumin, salt and pepper to taste to the mixing bowl and stir for 1 min./60°C/speed 2 until the cream cheese is distributed.

Put the cooked rice from the simmering basket into the mixing bowl and mix for 1 min./reverse/speed 2.
