Description

This rice variation with peppers and dried tomatoes is a real all-rounder! I like to make it when there is rice left over from the day before. The preparation is super easy and quick, perfect for a quick after-work meal. The peppers and dried tomatoes give the rice a slightly sweet note, which is wonderfully complemented by the basil. If you like, you can add some grated cheese on top. Tastes both warm and cold and is ideal as a side dish or as a light main course.

Ingredients (10 ingredients)

  • 2 Tasse/n Rice
  • 1 kl. Dose/n Peas fine
  • 1 piece Bell pepper(s) red
  • 6 piece Tomato(es) dried, from the jar
  • 3 tbsp Ketchup
  • Tomato paste
  • Basil
  • Salt
  • Pepper
  • Margarine

Preparation (4 steps)

Prepare rice

Cook the rice according to package instructions. Drain the water and return the rice to the pot. Add a piece of margarine and mix.

Chop peppers and tomatoes

Put the bell pepper in pieces in the mixing bowl and chop for 3 sec./speed 4. Add the dried tomatoes and chop for another 2 sec./speed 4.

Mix vegetables and rice

Thermomix® Setting
10 sec/Linkslauf/Speed 2 Reverse

Add the chopped peppers and tomatoes together with the peas, ketchup and tomato paste to the rice in the mixing bowl. Mix everything for 10 sec./reverse/speed 2.

Season

Thermomix® Setting
5 sec/Linkslauf/Speed 2 Reverse

Season the rice with salt, pepper and basil and mix for another 5 sec./reverse/speed 2 if necessary.
