Description

This aromatic beef broth with rice noodles is real soul food! Inspired by Vietnamese Pho, it is quick to prepare and warms you from the inside. The secret lies in the spices that give the broth a special depth. I love how the tender beef fillet strips cook in the hot broth and the fresh herbs give the dish a vibrant touch. Perfect for a cold day or when you need something quick. With fresh chili and lime, everyone can determine their own level of spiciness. An absolute must for all lovers of Asian cuisine!

Ingredients (17 ingredients)

  • 2 piece Shallots
  • 1 tbsp Rapeseed oil
  • 2 piece Star anise
  • 1 Stange Cinnamon
  • 1 piece Cardamom pod
  • 2 l Beef broth
  • to taste Salt
  • to taste Pepper
  • 150 g Rice noodles
  • 100 g Mung bean sprouts
  • 2 piece Spring onions
  • 1 piece red Chili (small)
  • 1 piece Lime
  • 15 g Coriander
  • 15 g Mint
  • 260 g Beef fillet
  • 2 tbsp Fish sauce

Preparation (5 steps)

Prepare shallots

Thermomix® Setting

Peel and halve 2 shallots. Place in the mixing bowl and chop for 3 seconds/speed 5. Use the spatula to push down.

Sauté spices

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 1 tbsp rapeseed oil, 2 star anise, 1 cinnamon stick and 1 cardamom pod to the shallots in the mixing bowl and sauté for 3 min./120°C/speed 1 until the spices start to smell.

Prepare broth

Thermomix® Setting
10 min/212°F/Speed 1 100

Add 2 l beef broth, salt and pepper and simmer for 10 min./100°C/speed 1.

Strain broth

Pour the soup through a fine sieve. Clean the mixing bowl.

Return broth to the mixing bowl

Thermomix® Setting
5 min/158°F/Speed 1 70

Pour the strained broth back into the mixing bowl and keep warm. 5 min./70°C/speed 1.
