Description

This dish is a wonderful combination of nutty black rice, juicy shrimp and crisp vegetables. The black rice, also called Venere rice, gives the dish a special touch and is rich in antioxidants. The shrimp are fried with rosemary and butter, which gives them a wonderful aroma. The green beans and cherry tomatoes provide freshness and a light acidity. Perfect for a light lunch or a summer dinner. It can also be prepared well in advance and enjoyed cold!

Ingredients (11 ingredients)

  • 160 g black Rice (Venere Rice)
  • 5 tbsp Salt
  • 400 g green Beans
  • 8 piece giant Shrimp (ready to cook, deveined)
  • 400 g Cherry tomatoes
  • 1 tbsp Butter
  • 1 Zweig(e) Rosemary
  • 2 tbsp Pepper
  • 0.5 tsp Raz el hanout
  • 2 tbsp Olive oil
  • 1 tbsp Olive oil

Preparation (6 steps)

Prepare Rice

Thermomix® Setting
35 min/Varoma/Speed 1 Varoma

Place 160 g of black rice in a bowl and pour over 500 ml of lightly salted water. Let soak for about 10 minutes. Then place the rice in the steamer basket and fill the mixing bowl with 500 ml of water. Insert steamer basket and cook for 35 min./Varoma/speed 1.

Refine Rice

After cooking, remove the rice from the steamer basket and place in a bowl. Mix with 2 tbsp olive oil and salt and set aside.

Blanch Green Beans

Thermomix® Setting
7 min/Varoma/Speed 1 Varoma

Clean 400 g of green beans, cut off the ends and place in the Varoma container. Pour 500 ml of water into the mixing bowl, attach the Varoma and blanch for 7 min./Varoma/speed 1. Then quench the beans in ice water.

Fry Shrimp and Tomatoes

Pat 8 giant shrimp dry with kitchen paper. Heat 2 tbsp olive oil in a pan and fry the shrimp and 400 g cherry tomatoes in it for 2 minutes. Then turn the shrimp and fry for another 2 minutes. Remove pan from heat, add 1 tbsp butter and 1 sprig of rosemary and toss shrimp and tomatoes in the foaming butter, seasoning with salt and 2 tbsp pepper.

Season Beans

Mix the blanched green beans with lemon juice and 1 tbsp olive oil, season with salt, pepper and 0.5 tsp Raz el hanout.

Arrange

Season the rice to taste and arrange in bowls with the beans, tomatoes and shrimp.
