This Asian game spice blend is more than just a recipe; it is a journey into the fascinating world of flavors, inspired by my travels through Southeast Asia. There I learned how spices can tell not only taste but also a story. The idea came about when I wanted to combine local game dishes with the complex flavors of Asian cuisine. The result is a mixture that combines both earthy warmth and exotic spiciness. The selection of ingredients is crucial. The Szechuan pepper, with its tingling, almost numbing effect, is the heart of the mixture. It brings a unique dimension to the game that is significantly different from traditional pepper. Star anise provides a sweet, licorice-like note that harmonizes perfectly with the spicy fennel and coriander seed. Cumin and juniper berries contribute an earthy depth, while cloves and cinnamon add a subtle warmth. The various paprika powders, from smoked to mild, provide color and a multi-layered smoky flavor. Garlic, onion and ginger powder form the aromatic base, while cane sugar and sea salt balance and enhance the flavors. The dried herbs such as marjoram, thyme, rosemary, oregano and savory bring a Mediterranean note that surprisingly goes well with the Asian flavors. When preparing in the Thermomix®, it is important that all ingredients are dry so that they can be ground optimally. The grinding time of 40 seconds on level 10 is a good starting point, but the time can be adjusted slightly depending on the desired fineness. Be sure to clean the mixing bowl thoroughly after grinding, as the spices are very intense. For a vegetarian or vegan version, the mixture can of course be used in the same way. It goes perfectly with tofu, tempeh or vegetable dishes. Experiment with different types of vegetables such as mushrooms, eggplants or pumpkin. Instead of game, you can also use beef, lamb or poultry. If you like it spicier, you can increase the amount of chili powder or add fresh chili. This spice blend is incredibly versatile. It is not only suitable for seasoning meat, but also for marinades, sauces or as a dry rub. Try it on grilled vegetables, in soups or stews. As a side dish, I recommend rice, noodles or potatoes. A fresh salad with a light vinegar-oil dressing completes the dish. The finished spice blend should be stored in an airtight container, ideally made of glass, in a cool, dry and dark place. This way it will last for several months and retain its full aroma. You can also prepare the mixture in smaller quantities and grind it fresh as needed to intensify the aroma.
