Description

This asparagus and mushroom omelette is a recipe that I often make in spring, when asparagus is at its best. It is a delicious and nutritious option for breakfast, brunch or even a light dinner. The combination of tender asparagus, sautéed mushrooms and leek gives it a very special flavor. In addition, the light cream gives it a creamy texture that makes it irresistible. It is very easy to prepare and can be enjoyed both hot and cold. I hope you like it as much as I do!

Ingredients (8 ingredients)

  • 8 piece Whole eggs
  • 1 cucharada sopera Light cream
  • 1 bunch Green asparagus
  • 250 gramos Sliced mushrooms
  • 1 pinch Salt
  • 1 pinch Black pepper
  • 1 pinch Olive oil
  • 120 gramos Leek

Preparation (6 steps)

Prepare the mushrooms

Thermomix® Setting
5 min/248°F/Giro inverso/Velocidad cuchara 120 Reverse

Wash and cut the mushrooms into slices. In the Thermomix bowl, add the mushrooms, a pinch of salt, a pinch of black pepper and a pinch of olive oil. Program 5 Min./120°C/Reverse rotation/Spoon speed.

Add the leek

Thermomix® Setting
3 min/248°F/Giro inverso/Velocidad cuchara 120 Reverse

Add the sliced leek to the Thermomix bowl together with the mushrooms. Program 3 Min./120°C/Reverse rotation/Spoon speed.

Beat the eggs

In a separate bowl, beat the 8 whole eggs with the tablespoon of light cream, a pinch of salt and a pinch of black pepper. Mix well with a fork.

Add the asparagus

Cut the green asparagus into small pieces. Add the asparagus to the Thermomix bowl together with the mushrooms and leek. Mix with the spatula.

Cook the omelette

Thermomix® Setting
15 min/194°F/Giro inverso/Velocidad cuchara 90 Reverse

Pour the beaten egg mixture into the Thermomix bowl over the asparagus, mushrooms and leek. Program 15 Min./90°C/Reverse rotation/Spoon speed. Check the cooking and, if necessary, program a few more minutes.

Serve

Serve the asparagus and mushroom omelette hot, decorated with asparagus tips. It can be accompanied with toast.
