Description

This velvety tomato soup is a true delight! I especially like to make it when I need something quick, but still want something warm and hearty on the table. The fresh herbs give the soup a special touch and the sherry provides a fine, elegant flavor nuance. If you prefer it a little lighter, you can also leave out the cream or replace it with a plant-based alternative. Perfect as an appetizer or as a light main course, especially on colder days. A dash of sherry is optional, but I think it rounds off the taste wonderfully. Preparation in the Thermomix® is super easy and quick!

Ingredients (12 ingredients)

  • 1 piece Onion
  • 1 tbsp Butter
  • 2 can Chopped tomatoes
  • 400 ml Tomato juice
  • 1 tsp Sugar
  • 2 tsp Vegetable broth
  • to taste Salt
  • to taste Pepper
  • 100 ml Dry sherry
  • 250 ml Cream
  • 1 Pck. Basil
  • 1 Pck. Parsley

Preparation (7 steps)

Chop onion

Peel 1 onion, quarter it and place it in the mixing bowl. Chop for 3 sec./speed 5.

Sauté onion

Add 1 tbsp butter to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add tomatoes and tomato juice

Add 2 cans chopped tomatoes (400 g), 400 ml tomato juice, 1 tsp sugar and 2 tsp vegetable broth to the mixing bowl.

Cook soup

Add salt and pepper to taste and cook for 5 min./100°C/speed 1.

Puree soup

Thermomix® Setting
30 sec/Speed 8

Puree the soup for 30 sec./speed 8, so that some tomato pieces remain. If necessary, help with the spatula.

Add sherry and cream

Thermomix® Setting
2 min/158°F/Speed 1 Linkslauf 70 Reverse

Add 100 ml dry sherry (optional) and 250 ml cream to the mixing bowl and stir for 2 min./70°C/speed 1 reverse.

Add herbs

10 sec/Speed 3 Linkslauf Reverse

Chop 1 pack basil and 1 pack parsley and add to the mixing bowl. Stir in for 10 sec./speed 3 reverse. If desired, keep some back for garnish.
