Description

This air-fried eggplant recipe is a delightful twist on classic eggplant parmesan. The eggplant is scored and turned inside out, creating a unique presentation and maximizing the surface area for that delicious marinara and mozzarella topping. It's a quick and easy vegetarian meal that's perfect for a light lunch or dinner. I love how the air fryer gives the eggplant a slightly crispy texture while keeping it tender inside. Ready in under 30 minutes, it's a great option for busy weeknights. Feel free to add a sprinkle of red pepper flakes for a little extra heat!

Ingredients (8 ingredients)

  • 1 piece medium eggplant
  • 4 tbsp olive oil
  • 1 pinch salt
  • 0.5 tsp ground black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • 1 tsp chopped fresh basil

Preparation (6 steps)

Prepare the Eggplant

Score the eggplant lengthwise all the way through the flesh, being careful not to cut through the skin. Score again widthwise to create cubes. Gently turn the eggplant inside out. Repeat with the second half. If the eggplant breaks, manipulate the outer edges to stand up or use a long skewer to hold it open. No Thermomix settings are needed for this step.

Season the Eggplant

Drizzle 2 tablespoons of olive oil, ½ teaspoon of salt, and ¼ teaspoon of pepper over both eggplant halves. No Thermomix settings are needed for this step.

Air Fry the Eggplant

Place the seasoned eggplant halves in an air fryer basket. Air-fry at 200°C for 10 minutes. No Thermomix settings are needed for this step.

Add Toppings

Open the air fryer and top each eggplant half with marinara sauce, mozzarella cheese, and Parmesan cheese, trying to fill each groove. No Thermomix settings are needed for this step.

Air Fry Again

Air-fry for 5 minutes longer at 200°C. No Thermomix settings are needed for this step.

Serve

Serve immediately, sprinkled with fresh basil. No Thermomix settings are needed for this step.
