Description

These stuffed eggplants are an absolute highlight for anyone who loves vegan and vegetarian cuisine! The eggplants are baked in the oven until they are nice and soft, and then filled with a delicious couscous filling. The couscous is mixed with vegan mince, corn and pomegranate seeds, which makes for a great texture and a fruity-fresh taste. A touch of parsley rounds off the dish perfectly. Ideal as a light main course or as a side dish for grilling. The preparation is uncomplicated and the result tastes simply delicious!

Ingredients (13 ingredients)

  • 300 ml Water
  • 1 tsp Salt
  • 150 g Couscous
  • 3 piece Eggplant(s)
  • 1 piece Onion(s)
  • 3 tbsp Frying oil
  • 200 g Mince substitute vegan
  • 2 tbsp Tomato paste
  • 1 tsp Salt
  • 1 pinch Pepper freshly ground
  • 150 g Corn
  • 50 g Pomegranate seeds
  • 3 Stängel Parsley, smooth

Preparation (6 steps)

Prepare couscous

Thermomix® Setting
5 min/212°F/Speed 1 100

Put 150 ml water and 1 tsp salt into the mixing bowl and bring to the boil for 5 min./100°C/speed 1. Add 150 g couscous and leave to swell for 5 min./100°C/speed 1.

Prepare and bake eggplants

Preheat the oven to 180 °C circulating air. Wash and halve the eggplants. Use a knife to cut several strips into the surface and brush the halves with frying oil using a brush. Place the halves on a baking tray lined with baking paper and bake for 30 minutes until they are soft inside.

Fry onions and mince

Thermomix® Setting
3 min/248°F/Speed 1 120

Peel and quarter the onion and put it in the mixing bowl. Chop for 3 sec./speed 5. Add 3 tbsp frying oil and sauté for 3 min./120°C/speed 1. Add 200 g mince substitute vegan and fry for 5 min./120°C/speed 1.

Add tomato paste

Thermomix® Setting
3 min/212°F/Speed 1 100

Add 2 tbsp tomato paste and 150 ml water to the mixing bowl and cook for 3 min./100°C/speed 1. Mix in 1 tsp salt and a pinch of freshly ground pepper.

Prepare filling

Pour the mince mixture from the mixing bowl into a bowl and mix with the swollen couscous, 150 g corn and 50 g pomegranate seeds. Wash 3 sprigs of parsley, cut into small pieces and mix into the filling.

Fill and serve eggplants

Hollow out the eggplant halves with a spoon and fill with the couscous mixture. Sprinkle the eggplants with parsley before serving.
