Description

This Pasta alla Norma recipe is a direct trip to Sicily, no plane ticket required! The eggplant, diced and fried until golden brown, becomes the star of this dish. The tomato sauce, with its touch of garlic and fresh basil, wraps the pasta in a hug of Mediterranean flavor. And to top off this delight, grated ricotta salata! I always use San Marzano tomatoes if I can find them, but a good can of organic tomatoes also works wonders. Ideal for a quick but flavorful meal, and perfect for lovers of Italian cuisine!

Ingredients (8 ingredients)

  • 100 gr pasta
  • 300 gr small eggplant
  • 2 clove garlic
  • 400 gr crushed tomato
  • 40 gr ricotta salata
  • 10 gr fresh basil
  • Salt
  • oil for frying the eggplant

Preparation (11 steps)

Prepare the eggplant

Cut the eggplant into cubes of approximately 1 cm. Place the cubes in a colander, salt generously and let stand for 30 minutes to release excess water and bitterness.

Dry the eggplant

After 30 minutes, dry the eggplant cubes very well with paper towels to remove moisture.

Fry the eggplant

In a pan, heat oil for frying. Fry the eggplant cubes until golden brown and crispy. Remove and place on paper towels to remove excess oil.

Chop the garlic

Peel the garlic cloves and place them in the Thermomix bowl. Chop for 3 seconds at speed 7.

Sauté the garlic

Add 1-2 teaspoons of olive oil to the Thermomix bowl. Sauté the chopped garlic for 3 minutes at 120°C at speed 1.

Add the tomato

Thermomix® Setting
25 min/212°F/Speed 1 100

Add the crushed tomato to the Thermomix bowl. Program 25 minutes at 100°C at speed 1. Cover the bowl.

Add the basil

Halfway through cooking the tomato, add the fresh basil, chopped with your fingers, to the Thermomix bowl. Continue cooking.

Cook the pasta

Meanwhile, boil the pasta in a pot with salted water, cooking it 1 minute less than indicated on the package.

Mix the eggplant and the sauce

Add the fried eggplant to the Thermomix bowl with the tomato sauce. Mix for 10 seconds at speed 2 with the rotation to the left.

Add the pasta and cooking water

Thermomix® Setting
2 min/212°F/Speed 1 100 Reverse

Once the pasta is cooked, add it to the Thermomix bowl along with 2 ladles of the cooking water. Cook for 2 minutes at 100°C at speed 1 with the rotation to the left, until the pasta is al dente.

Serve

Serve immediately. Grate ricotta salata over the top and add a little chopped fresh basil.
