Description

This creamy pasta with smoked tofu and mushrooms is a vegetarian delight that I prepare often. Ingredients (11 ingredients)

  • 200 gramos Short pasta
  • 100 gramos Mushrooms
  • 1 piece White onion
  • 1 clove Garlic
  • 80 gramos Smoked tofu
  • 150 mililitros Cream
  • 60 mililitros White wine
  • 100 mililitros Vegetable stock
  • 20 mililitros Olive oil
  • 1 pinch Salt
  • 1 pinch Pepper

Preparation (6 steps)

Chop the onion and garlic

Place 1 white onion in quarters in the bowl and chop for 3 sec./Stufe 5. Remove and reserve. Then, place 1 clove of garlic in the bowl and chop for 3 sec./Stufe 7. Remove and reserve.

Sauté the onion and mushrooms

Add 20 ml of olive oil to the bowl, along with the chopped onion. Sauté for 3 Min./120°C/Stufe 1. Add 100 g of sliced mushrooms and sauté for 5 Min./120°C/Stufe 1.

Add the tofu and garlic

Incorporate 80 g of smoked tofu cut into small cubes and the chopped garlic into the bowl. Sauté for 3 Min./120°C/Stufe 1.

Cook the sauce

1 min/Varoma/Speed 1 y 8 min/194°F/Speed 2 90

Pour 60 ml of white wine into the bowl and cook for 1 Min./Varoma/Stufe 1 without the measuring cup, so that the alcohol evaporates. Add 100 ml of vegetable stock and 150 ml of cream. Cook for 8 Min./90°C/Stufe 2. Season with salt and pepper to taste.

Cook the pasta

While the sauce is cooking, cook 200 g of short pasta in a pot with boiling water and salt until it is al dente, approximately 12 minutes. Drain and mix with a little olive oil. This step is done outside the Thermomix.

Mix and serve

Pour the tofu and mushroom sauce over the cooked pasta. Mix well and serve immediately. Optionally, sprinkle with dried oregano.
