Description

This recipe for pork fillet baguette with wild lingonberries is a real treat and perfect for any party or a cozy brunch. I like to make it again and again because it is so easy to prepare and still brings something special to the table. The tender pork fillet harmonizes wonderfully with the sweetness of the lingonberries and the spicy thyme. Preparation with the Thermomix® makes it even easier and faster. An absolute must for anyone who loves hearty and fruity flavors! The baguette slices are a great carrier for the fillet and lingonberries.

Ingredients (9 ingredients)

  • 1 Stück Baguette
  • 2 Stück Garlic cloves
  • 1 Bund Thyme
  • 40 g Butter
  • 600 g Pork fillets
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • 2 EL Olive oil
  • 212 ml Wild lingonberries in their own juice

Prepare garlic and thyme

Peel 2-3 garlic cloves and place in the mixing bowl. Chop 3 sec./speed 7. Wash the thyme, shake dry and pluck the leaves.

Melt butter

Thermomix® Setting
3 min/122°F/Speed 2 50

Put 40 g butter in the mixing bowl and melt 3 min./50°C/speed 2.

Prepare garlic-thyme butter

Thermomix® Setting
10 sec/Speed 3

Add the chopped garlic and thyme leaves to the melted butter in the mixing bowl. Mix 10 sec./speed 3.

Prepare baguette

Cut the baguette into approx. 1 cm thick slices and spread on a baking sheet.

Spread baguette

Spread the baguette slices with the garlic-thyme butter.

Toast baguette

Toast the baguette slices in a preheated oven at 200°C top/bottom heat for approx. 5-7 minutes until golden brown. In the meantime, prepare the meat.

Prepare pork fillet

Pare the pork fillets (2 à 300 g), season with salt and pepper and sear sharply in 2 tbsp olive oil in a pan from all sides.

Slice pork fillet

Cut the seared pork fillets into thin slices.

Top baguette

Top the toasted baguette slices with the pork fillet slices and garnish with wild lingonberries (1 jar à 212 ml).
