Description

This berry crumble with vanilla sauce from the Thermomix® is a warming dessert with frozen mixed berries, oat flakes, butter, and brown sugar. The grape juice in the vanilla sauce provides a fruity note. Prepared in about 60 minutes, the recipe yields 6 servings. Ideal as a sweet dessert for the whole family, especially in the cold season.

Ingredients (14 ingredients)

  • 500 g Frozen mixed berries
  • 80 g Butter
  • 70 g Brown sugar
  • 150 ml Grape juice
  • 35 g Sugar (white)
  • 50 g Oat flakes
  • 25 g Chopped hazelnuts
  • 50 g Wheat flour Type 405
  • 1 Prise(n) Cinnamon
  • 1 Prise(n) Salt
  • 2 EL Cornstarch
  • 300 ml Whole milk
  • 1 Stück Egg (room temperature)
  • 0.5 Stück Vanilla pod

Preparation (11 steps)

Prepare berries

Thaw the frozen berry mix (500 g) and drain well. Grease a baking dish with 1 tsp of butter. Mix the drained berries with 20 g of brown sugar and place in the prepared baking dish.

Reduce grape juice

Thermomix® Setting

Put the grape juice (150 ml) together with 1 tbsp of white sugar in the mixing bowl and let it reduce for 5 min./100°C/speed 1 without a measuring cup.

Pour reduced grape juice over the berries

Pour the reduced grape juice over the berries in the baking dish.

Prepare crumble

Thermomix® Setting
5 sec/Speed 4

Put oat flakes (50 g), chopped hazelnuts (25 g), wheat flour type 405 (50 g), brown sugar (50 g), cinnamon (1 pinch) and salt (1 pinch) into the mixing bowl and mix for 5 sec./speed 4.

Add butter and make crumble

Thermomix® Setting
20 sec/Speed 4

Add the butter (80 g) in pieces and process into crumbles for 20 sec./speed 4. If necessary, scrape down the sides with the spatula and repeat the process.

Spread crumble and bake

Spread the crumbles evenly over the berries in the baking dish. Bake the crumble in a preheated oven at 200 °C top/bottom heat for about 30 minutes until golden brown.

Prepare vanilla sauce

Stir the cornstarch (2 tbsp) with 2 tbsp of milk in a small bowl until smooth. Separate the egg and whisk the egg yolk with 2 tbsp of milk in a separate bowl.

Cook vanilla sauce

Put the remaining milk (266 ml), the pulp of half a vanilla pod and the remaining white sugar (25 g) into the mixing bowl and bring to the boil for 7 min./90°C/speed 2.

Stir in cornstarch

1 min/194°F/Speed 2 90

Add the stirred cornstarch and stir in for 1 min./90°C/speed 2.

Stir in egg yolk

30 sec/158°F/Speed 2 70

Let the mixture cool briefly (approx. 2 minutes). Then add the whisked egg yolk and stir in for 30 sec./70°C/speed 2.

Serve

Remove the crumble from the oven and serve warm with the vanilla sauce.
