Description

Caramelized nut-fruit cookies from the Thermomix® are a festive finger food with candied fruits, pine nuts, almonds, honey and butter. The preparation in the Thermomix® takes about 75 minutes, of which 45 minutes are active working time. The recipe yields approximately 20 cookies and is ideal as a Christmas dessert or for special occasions. The combination of nuts and caramel makes these cookies a special treat in the winter time.

Ingredients (10 ingredients)

  • 100 g candied fruits
  • 100 g pine nuts
  • 100 g flaked almonds
  • 100 g almonds, slivered
  • 40 g Wheat flour Type 405
  • 50 g Honey
  • 175 g Sugar
  • 120 g Butter
  • 140 ml Cream
  • 300 g Bittersweet chocolate coating

Preparation (7 steps)

Prepare fruits and nuts

Preheat the oven to 200 degrees (convection oven 180 degrees, gas level 3). Place 100 g of candied fruits (e.g. cherries, apricots, figs, pears or quinces) in the mixing bowl and chop for 5 sec./speed 5. Then transfer to a bowl. Add 100 g of pine nuts, 100 g of flaked almonds, 100 g of almonds, slivered and 40 g of wheat flour type 405 to the candied fruits in the bowl and mix.

Prepare caramel

Thermomix® Setting
8 min/212°F/Speed 2 100

Place 50 g honey, 175 g sugar, 120 g butter and 140 ml cream in the mixing bowl and bring to the boil for 8 min./100°C/speed 2 without the measuring cup.

Simmer nut-fruit mixture

Thermomix® Setting
5 min/194°F/Linkslauf Speed 1 90 Reverse

Add the nut-fruit mixture from the bowl to the caramel in the mixing bowl and stir in for 5 min./90°C/reverse rotation speed 1. Use the spatula to help.

Bake Florentines

Line a baking sheet with baking paper and spread the Florentine mixture thinly and evenly on it. Spreading works well with a damp cake server. Bake in the preheated oven on the second rack from the bottom for about 12 minutes.

Cut Florentines

Remove the Florentine base from the oven, let it cool and turn it onto a board. Peel off the baking paper and cut the base into squares or diamonds with a heavy, wet knife (edge length about 3 cm).

Melt chocolate coating

4 min/122°F/Speed 2 50

Break 300 g of bittersweet chocolate coating into pieces and place in the mixing bowl. Melt for 4 min./50°C/speed 2.

Cover Florentines with chocolate

Dip the Florentines halfway into the melted chocolate coating, let them drain a little and place them on a wire rack to dry.
