Description

These simple coconut cookies from the Thermomix® are an ideal recipe for Christmas baking or as a sweet snack in between. The main ingredients are shredded coconut, butter, eggs, sugar and flour. Preparation with the Thermomix® takes about 40 minutes and yields approximately 40 cookies. Suitable for anyone who wants to bake quick and uncomplicated cookies.

Ingredients (6 ingredients)

200 g Sugar
2 piece Eggs
125 g Butter, soft
250 g Flour
1 tsp Baking powder
150 g Shredded coconut

Preparation (5 steps)

Beat sugar and eggs until frothy

Put 200 g sugar and 2 eggs into the mixing bowl and beat for 3 min./level 3.

Add butter and mix

Add 125 g soft butter in pieces and mix for 30 sec./level 4.

Mix flour and baking powder and add

Mix 250 g flour and 1 tsp baking powder, add to the mixing bowl and mix for 30 sec./level 3.

Fold in shredded coconut

Add 150 g shredded coconut and fold in for 20 sec./reverse/level 2.

Process the dough and bake

Form the dough into small balls, place on a baking sheet lined with parchment paper and bake in a preheated oven at 175°C top/bottom heat for approx. 10-12 minutes.
