These wholemeal honey cookies are a great alternative for a healthy and tasty breakfast.   • 2 piece Eggs
  • 1 piece Vanilla extract

Emulsify egg, oil and honey

In the Thermomix bowl, pour 1 egg, an unspecified amount of extra virgin olive oil and an unspecified amount of honey. Add an unspecified amount of vanilla extract. Mix for 20 Sec./Stufe 3.

Add flour and baking powder

Add an unspecified amount of wholemeal flour and an unspecified amount of baking powder to the bowl. Mix for 30 Sek./Stufe 4.

Form the balls

Transfer the dough to a lightly floured work surface. Take about 25 g of dough and roll it between your hands to form a ball. Flatten slightly between the palms.

Arrange and bake

Place the flattened ball on a baking tray, previously lined with baking paper, and form the other balls with the rest of the dough. With the tines of a fork, impress the texture on the balls, flattening them a little more. Bake the wholemeal honey cookies in a hot oven at 170°C for 20-25 minutes.

Wholemeal honey cookies remind me so much of my childhood breakfasts, when my grandmother used to prepare them with love using simple and genuine ingredients. The scent that spread throughout the house was unmistakable, a real invitation to start the day off right. I wanted to revive this recipe, adapting it to the use of the Thermomix® to make it even faster and more accessible to everyone. The wholemeal flour is the soul of these cookies. It gives a rustic flavor and a slightly coarser texture than white flour, but it is this characteristic that makes them so special. The extra virgin olive oil, strictly of high quality, contributes to giving softness to the dough and a delicate aroma. The honey, preferably acacia or chestnut for their intense aroma, is the natural sweetener that replaces refined sugar, making the cookies healthier and also suitable for children. The egg binds all the ingredients, while the vanilla extract adds an aromatic note that perfectly matches the flavor of the honey. Finally, the baking powder guarantees a light leavening, making the cookies crumbly and not too heavy. For preparation with the Thermomix®, it is essential to respect the times and speeds indicated. The initial emulsion of egg, oil and honey must be homogeneous, so it is important to mix the ingredients well. When adding the flour and baking powder, it is advisable not to work the dough too much, otherwise the cookies may be hard. Once the ball has formed, transfer it to a lightly floured surface and work it quickly to prevent it from sticking. During cooking, keep an eye on the oven and adjust the temperature if necessary. The cookies should brown lightly, but not burn. For a vegetarian version, you can replace the egg with a tablespoon of applesauce or mashed banana. For a vegan version, you can use a flax egg (a tablespoon of ground flax seeds mixed with three tablespoons of water). To vary the flavor, you can add spices such as cinnamon, ginger or nutmeg to the dough. Another idea is to add dark chocolate chips or chopped dried fruit. These wholemeal honey cookies are perfect to enjoy for breakfast, dipped in milk or tea. They can also be served as an afternoon snack, accompanied by a cup of coffee or herbal tea. They are also great to take with you for an outing or a picnic. To store the cookies, it is advisable to store them in an airtight container at room temperature.
