Description

These hearty cheese dumplings from the Thermomix® are a delicious main course or appetizer, ideal for using up old bread. The main ingredients are white bread, mountain cheese, milk, onions and parsley. Preparation takes a total of 75 minutes, with an active working time of around 45 minutes. The recipe yields 4 servings and is perfect for lovers of hearty, vegetarian cuisine.

  • 250 g White bread or bread rolls from the day before
  • 250 ml Milk (3.5% fat)
  • 1 piece Onion
  • 0.5 bunch smooth Parsley
  • 175 g Mountain cheese
  • 1 tbsp Butter
  • 3 piece Eggs (size M)
  • to taste Salt
  • to taste Pepper
  • 2 pinch Nutmeg
  • 2 tbsp Breadcrumbs
  • Butter for frying

Preparation (7 steps)

Prepare bread

Cut 250 g of white bread or bread rolls from the day before into small cubes and place in a bowl. Heat 250 ml of milk (3.5% fat) and pour over the bread cubes. Soak the bread cubes well with the milk.

Chop onion and parsley

Peel 1 onion, halve and place in the mixing bowl. Chop for 3 sec/speed 5. Add 1/2 bunch of smooth parsley and chop for a further 3 sec/speed 5. Scrape down the sides with the spatula.

Sauté onions

Add the chopped onion and parsley to the mixing bowl with some butter and sauté for 3 min/120°C/speed 1.

Prepare cheese

Cut 175 g mountain cheese into small cubes and set aside.

Mix dumpling mixture

Add the sautéed onions and parsley to the soaked bread in the bowl. Add 3 eggs (size M), the cheese cubes, salt, pepper and 2-3 pinches of nutmeg. Mix everything well. If the dumpling mixture is too moist, stir in 1-2 tablespoons of breadcrumbs.

Shape dumplings

Let the mixture rest for 10 minutes. With moistened hands, shape 12 flat dumplings.

Fry dumplings

Heat plenty of butter in a pan and fry the dumplings over medium heat until golden brown and crispy on both sides.

About this recipe

Cheese dumplings are a piece of my childhood for me. My grandma, a true Bavarian, always made them when there was bread left over from the day before. It was a dish that radiated warmth and security, and the smell of melted cheese and roasted butter filled the whole house. This recipe is my homage to her culinary skills, adapted to the modern kitchen with the Thermomix®, but with the same hearty taste. The secret to good cheese dumplings lies in the ingredients. The white bread or rolls from the day before form the basis. They should no longer be completely fresh, but not rock hard either. The milk, preferably whole milk, makes the bread nice and soft and juicy. The mountain cheese is the star of the dish. It brings a spicy, slightly nutty note that harmonizes perfectly with the bread. Depending on your taste, you can also use Emmentaler or Gruyère, but mountain cheese is my personal favorite. Onions and parsley provide a fresh, aromatic component. The butter is not only used for sautéing the onions, but also for frying the dumplings, which gives them a beautiful golden brown crust. Eggs bind the mixture and nutmeg rounds off the taste. The Thermomix® makes preparation much easier. Chopping onions and parsley is quick and even. When sautéing the onions, it is important to keep an eye on the temperature so that they do not burn. The dumpling mixture should not be too moist, otherwise it will fall apart when fried. If it is too moist, simply add some breadcrumbs. When shaping the dumplings, it helps to moisten your hands slightly. This prevents the mixture from sticking so much. Cheese dumplings are incredibly versatile. If you like it vegetarian, simply leave out bacon or ham. For a vegan version, you can replace eggs with a plant-based alternative and use vegan cheese. You can experiment with the spices. Caraway, marjoram or thyme go perfectly with cheese dumplings. The cheese dumplings are best served with a fresh salad, for example a green salad with vinegar and oil or a coleslaw. Applesauce or cranberries also go well with it. If you like it more hearty, you can serve the dumplings with brown butter and grated Parmesan. Leftover cheese dumplings can be stored in the refrigerator and reheated in the pan or oven the next day. You can also prepare the dumplings and freeze them raw. They should then be thawed before frying. The dumpling mixture can also be prepared the day before and stored in the refrigerator. This gives the flavors time to develop.
