Description

This bruschetta with tomatoes and zucchini is a real eye-catcher at any party! I especially like to make them in the summer when the ingredients are fresh from the market. The crispy pizza dough, topped with aromatic vegetables and a touch of balsamic cream, simply tastes delicious. The recipe is super easy and quick to prepare, so you can spend more time with your guests. If you like, you can sprinkle some grated Parmesan cheese over it. An absolute must for all lovers of Italian cuisine!

Ingredients (11 ingredients)

  • 5 tbsp Olive oil
  • Salt
  • 200 g Zucchini
  • 300 g Tomatoes
  • 1 piece Onion
  • 2 clove Garlic
  • 1 kleiner Topf Basil
  • 2 tbsp light Balsamic vinegar
  • Sugar
  • Pepper
  • 10 tsp Balsamic cream

Preparation (6 steps)

Prepare and bake pizza dough

Halve the pizza dough lengthwise and cut into 5 equal rectangles each. Spread the pieces of dough on 2 baking sheets lined with baking paper. Put 3 tablespoons of olive oil in the mixing bowl and mix for 3 seconds/speed 3. Drizzle the dough rectangles with the flavored oil and season with salt. Bake the sheets one after the other in the preheated oven (electric oven: 200 °C/ convection oven: 175 °C/ gas: see manufacturer) for approx. 11 minutes until golden brown.

Chop zucchini

Thermomix® Setting

Wash the zucchini, rub dry, clean and cut into coarse pieces. Place the zucchini pieces in the mixing bowl and chop for 3 seconds/speed 4. Transfer to a bowl.

Prepare tomatoes

Wash, clean, quarter and core the tomatoes. Add to the zucchini in the bowl.

Chop onion and garlic

Peel and quarter the onion and place in the mixing bowl. Chop for 3 seconds/speed 5. Peel the garlic, add and chop for a further 2 seconds/speed 7.

Mix vegetables

Add the onion and garlic to the tomatoes and zucchini in the bowl. Wash the basil, shake dry and pluck the leaves from the stems. Add basil, vinegar and 2 tablespoons of olive oil. Season with salt and sugar and mix well.

Arrange Bruschetta

Remove the pizza bases from the oven and arrange them warm on plates with the vegetable salad. Drizzle with 2 teaspoons of balsamic cream each and sprinkle with pepper.
