Description

This Thermomix® recipe for veal fillet with three kinds of Brussel sprouts in mushroom sauce is a protein-rich main course with mushrooms, onions and seasonal vegetables such as Brussel sprouts, cauliflower and broccoli. Preparation in the Thermomix® takes about 45 minutes, the active working time is about 30 minutes. The recipe is ideal for lovers of hearty, Asian-inspired meat dishes and is suitable as a satisfying lunch or dinner. The quantity is calculated for one portion.

Ingredients (12 ingredients)

  • 100 g Veal fillet
  • 50 g Mushrooms
  • 1 Stück small Onion
  • 1 Stück Spring onion
  • Garlic
  • 100 g Brussel sprouts
  • 100 g Cauliflower
  • 100 g Broccoli
  • nach Geschmack Soy sauce (without sugar)
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • nach Geschmack Red peppercorns

Preparation (10 steps)

Chop onions and garlic

Thermomix® Setting

Put onion in the mixing bowl and chop for 3 sec./level 5. Add garlic and chop for 3 sec./level 7.

Sauté onions and garlic

Add onions and garlic with a little water to the mixing bowl and sauté for 3 min./120°C/level 1.

Add mushrooms

Add quartered mushrooms to the mixing bowl and cook for 3 min./100°C/level 1.

Add spring onions

Add spring onions in rings to the mixing bowl and cook for 1 min./100°C/level 1.

Deglaze sauce

Thermomix® Setting
2 min/212°F/Speed 1 212°F

Add soy sauce and a little water to the mixing bowl and simmer for 2 min./100°C/level 1. Set aside.

Prepare cauliflower florets

Cut 1-2 cauliflower florets into slices and set aside.

Cook vegetables

Thermomix® Setting

Add 500 ml water and salt to the mixing bowl. Place Brussel sprouts in the simmering basket and cook for 8 min./Varoma/level 1. Remove simmering basket. Place cauliflower in the simmering basket and cook for 4 min./Varoma/level 1. Remove simmering basket. Place broccoli in the simmering basket and cook for 3 min./Varoma/level 1. Remove simmering basket.

Season vegetables

Season the drained vegetables to taste with sea salt, pepper and grated nutmeg.

Sear veal fillet

Season the meat on both sides with salt and pepper and sear vigorously on both sides of the cut surface in a separate coated pan (it browns nicely on baking paper) without fat. Remove from the pan and finish cooking in the oven at 160 degrees for about 10 minutes.

Fillet

Fillet: Let the oven cool down to 80 degrees and let the meat rest in it for another 10 minutes. On a large plate, drape the vegetables around the mushroom sauce, arrange the veal fillet on top in slices, and add freshly ground red pepper.
