Description

I love this recipe for stuffed zucchini! It is a wonderful dish that is perfect for the summer when zucchini are in season. The combination of the hearty bulgur with ham and the fresh tomatoes is simply delicious. The basil yogurt provides a pleasant freshness. The preparation is a bit more complex, but it's definitely worth it. You can also prepare the stuffed zucchini well in advance and then bake them in the oven. A great dish for a relaxed dinner with friends or family. And the best part: it's super variable! You can also add other vegetables or cheese.

Ingredients (15 ingredients)

  • 4 piece round Zucchini
  • 1 piece Onion
  • 2 piece Tomatoes
  • 100 g cooked Ham in slices
  • 6 tbsp Olive oil
  • 1 tbsp Tomato paste
  • 600 ml Vegetable broth
  • 300 g Bulgur
  • Salt
  • ground Cumin
  • Pepper
  • 4 Stiele Basil
  • 250 g Greek yogurt
  • 1 tsp Lemon juice
  • Oil for the pan

Preparation (9 steps)

Prepare zucchini

Wash zucchini and cut off a lid from each. Hollow out zucchini. Cut pulp into small pieces and set aside. Peel onion and dice finely. Wash tomatoes and cut into small cubes. Dice ham.

Sauté ham and sauté vegetables

Put 2 tbsp oil in the mixing bowl. Add diced ham and sauté for 3 min./120°C/speed 1.

Sauté onion and zucchini pulp

Add onion and zucchini pulp and sauté for another 3 min./120°C/speed 1.

Sweat tomato paste

Thermomix® Setting
1 min/248°F/Speed 1 120

Stir in tomato paste and sauté for 1 min./120°C/speed 1.

Cook bulgur

Thermomix® Setting
15 min/212°F/Speed 1 100 Reverse

Add vegetable broth and bulgur. Season with salt and cumin and cook for 15 min./100°C/speed 1. Activate reverse.

Fold in tomatoes

Fold in diced tomatoes and mix with the spatula.

Fill and bake zucchini

Lightly salt the hollowed out zucchini inside and place in an oiled baking dish. Fill zucchini with the bulgur mixture. Place zucchini lids next to it in the dish. Drizzle everything with 4 tbsp oil. Sprinkle with a little salt and pepper. Bake in a preheated oven (electric oven: 200 °C/convection: 180 °C) for 35–40 minutes.

Prepare basil yogurt

Wash basil and, except for a few leaves for garnish, cut into fine strips. Put yogurt, lemon juice and basil in the mixing bowl and mix for 10 sec./speed 3. Season with salt and pepper.

Arrange

Arrange zucchini with basil yogurt. Garnish with remaining basil.
