Description

Oven baked stuffed zucchini are a classic of Italian cuisine, perfect for a family lunch or a dinner with friends. The combination of ground beef, sausage, parmesan and breadcrumbs creates a flavorful and substantial filling, which perfectly matches the sweetness of the zucchini. I often prepare them in the summer, when zucchini are at their best, but they are good all year round. A simple dish to make, but with great effect, that everyone will like! They can be prepared in advance and baked at the last moment.

Ingredients (10 ingredients)

  • 4 piece Round zucchini
  • 300 g Ground beef
  • 200 g Pork sausage
  • 50 g Grated Parmesan cheese
  • 50 g Breadcrumbs
  • 1 bunch Parsley
  • 1 uovo Eggs
  • 30 ml Extra virgin olive oil
  • 1 pinch Salt
  • 1 pinch Black pepper

Preparation of the zucchini

Wash the zucchini and remove the stalk. Divide the zucchini in half.

Removal of the pulp

With a knife and a spoon, gently dig out each zucchini half, removing the pulp and keeping it aside.

Chop the zucchini pulp

Put the zucchini pulp in the bowl and chop coarsely for 3 Sec./Stufe 4.

Preparation of the filling

In a bowl, combine the ground beef, crumbled sausage, grated Parmesan cheese, breadcrumbs, finely chopped parsley and chopped zucchini pulp. Season with salt and pepper and add the egg. Knead with your hands until you get a homogeneous mixture.

Stuffing the zucchini

Arrange the zucchini halves in a baking dish with the cut side facing up. Grease the zucchini with extra virgin olive oil and salt. Stuff the zucchini with the meat mixture.

Sprinkle with breadcrumbs and oil

Sprinkle the surface of the zucchini with breadcrumbs and drizzle with a little extra virgin olive oil.

Baking in the oven

Bake in a preheated static oven at 180°C for 40 minutes or until the filling is well cooked and golden brown on the surface.
