Description

This Marche tripe recipe is a hearty and traditional dish from the Marche region of Italy. I love how the tripe becomes so tender from simmering slowly in an aromatic sauce of vegetables, white wine and tomatoes. A hint of fennel seeds and nutmeg adds a special touch to the dish. It's a perfect dish for a cool autumn evening and is wonderful served with grated cheese. It takes some time to prepare, but the result is worth it! A true soul food that reminds us of grandma's cooking.

Ingredients (16 ingredients)

  • 750 g tripe
  • 1 piece celery
  • 1 piece carrots
  • 1 piece onions
  • 0.5 bicchiere white wine
  • white wine vinegar
  • 1 piece fresh chili peppers
  • 1 piece potatoes
  • 700 g tomato puree
  • wild fennel
  • nutmeg
  • marjoram
  • extra virgin olive oil
  • fine salt
  • pepper
  • 50 g grated cheese

Preparation (10 steps)

Chopped vegetables

Thermomix® Setting

Place an onion, celery and a carrot in the bowl and chop for 5 Sec./Stufe 5. Transfer the chopped vegetables to a large saucepan.

Sauté the vegetables

Add extra virgin olive oil to taste and a fresh chilli pepper in pieces to the pan with the chopped vegetables. Mix and bring to the heat.

Brown the tripe

Add 750 g of tripe to the pan and let it flavor with the vegetables.

Deglaze with wine and vinegar

Deglaze with ½ glass of white wine and a dash of white wine vinegar.

Cook the tripe

Salt, pepper and cook until the liquid has reduced.

Add the potatoes

Cut a potato into sticks and then add it to the pan.

Add the tomato puree

After 3-4 minutes add 700 g of tomato puree.

Flavor and cook

40 min/Speed 1

Flavor with a nice pinch of nutmeg and mix. Lower the heat to minimum and cook for 40 Min./Stufe 1, stirring occasionally.

Add fennel and marjoram

Thermomix® Setting
5 min/Speed 1

At the end of cooking, add some wild fennel and a little chopped marjoram to the tripe. Leave to flavor for 5 Min./Stufe 1 and then turn off the heat.

Serve

Pour the Marche tripe into an earthenware dish and add plenty of grated cheese to garnish.
