Description

Caramelized hazelnuts are quickly prepared with the Thermomix® and are a delicious vegetarian snack or a sweet dessert. The main ingredients are sugar, vanilla sugar, water and hazelnuts with skin. Preparation takes about 25 minutes and yields one serving. Ideal as Christmas finger food or for those with a sweet tooth.

Ingredients (4 ingredients)

  • 100 g Sugar
  • 4 Pck. Vanilla sugar
  • 100 ml Water
  • 200 g Hazelnuts with skin

Preparation (5 steps)

Prepare sugar solution

Thermomix® Setting
3 min/212°F/Speed 2 100

Put 100 g sugar, 4 packets vanilla sugar and 100 ml lukewarm water into the mixing bowl and heat for 3 min./100°C/speed 2 until the sugar has dissolved.

Add and mix hazelnuts

2 min/212°F/Linkslauf Speed 1 100 Reverse

Put 200 g hazelnuts with skin into the mixing bowl and stir in for 2 min./100°C/reverse rotation speed 1. Help with the spatula if necessary.

Simmer until crystallized

Thermomix® Setting
6 min/212°F/Linkslauf Speed 1 100 Reverse

Let the mixture simmer for another 6 min./100°C/reverse rotation speed 1 until the liquid has evaporated and the sugar has crystallized. Help with the spatula if necessary.

Caramelize

Thermomix® Setting
3 min/212°F/Linkslauf Speed 1 100 Reverse

Heat the hazelnuts for another 3 min./100°C/reverse rotation speed 1 while stirring until the sugar layer melts slightly again and caramelizes. Help with the spatula if necessary.

Let cool

Place the caramelized hazelnuts on a baking sheet lined with baking paper and separate them with a spoon. Then let it harden completely.
