Description

This onion soup is a comforting dish full of flavor, ideal for cold days. The caramelized onion gives it a sweet touch and the combination with white wine makes it irresistible. It is perfect as a starter in a special dinner or as a light main course. I prepare it often in autumn and winter, and it is always a success. In addition, it is a very economical and easy recipe to make with the Thermomix®. Go ahead and try it, you will love it! You can use chicken or vegetable broth for a vegetarian version. The gratin with cheese gives it the perfect final touch.

Ingredients (11 ingredients)

  • 4 piece onions
  • 1 cucharada butter
  • 2 cucharadas soy
  • 1 l chicken or meat broth
  • 1 container white wine or brandy
  • 2 hojas bay leaf
  • 1 pinch pepper
  • 1 pinch salt
  • 1 pinch evoo
  • 4 slice bread
  • 100 g grated cheese for gratinating

Preparation (7 steps)

Onions in julienne

Peel the 4 onions and cut them into julienne strips. Reserve.

Sauté the onion

Thermomix® Setting
5 min/248°F/Velocidad 1 120

Add 1 tablespoon of butter and a splash of extra virgin olive oil to the Thermomix glass. Program 5 Min./120°C/Speed 1 to melt the butter and heat the oil.

Add the onion and sauté

Thermomix® Setting
20 min/248°F/Velocidad 1 120

Add the julienned onion to the Thermomix glass. Program 20 Min./120°C/Speed 1. Stir with the spatula halfway through cooking to ensure it is fried evenly.

Add white wine and soy

Thermomix® Setting
5 min/212°F/Velocidad 1 100

Add 1 glass of white wine and 2 tablespoons of soy sauce to the glass. Program 5 Min./100°C/Speed 1, without the measuring cup, so that the alcohol evaporates.

Add broth and bay leaf

Thermomix® Setting
10 min/212°F/Velocidad 1 100

Add 1 liter of chicken or meat broth, 2 bay leaves, pepper and salt to taste. Program 10 Min./100°C/Speed 1.

Prepare to gratin

Preheat the oven to 200 degrees. Cut slices of bread. Pour the soup into individual earthenware bowls, place the slices of bread on top and cover with grated cheese.

Gratin

Place the bowls in the preheated oven and gratin until the cheese is golden and bubbly, approximately 5-10 minutes.
