Description

This Carpaccio with pear segments and nut brittle is an elegant appetizer, prepared in the Thermomix®. The main ingredients are pears, mixed nuts, brown sugar, butter and white wine. In just 25 minutes, 4 servings of this gluten-free dish are created. Ideal for festive occasions, as finger food or a light appetizer in autumn and winter.

Ingredients (14 ingredients)

  • 2 Stück Pears
  • 6 EL Brown sugar
  • 1 EL Butter
  • 500 ml White wine
  • 1 Handvoll Mixed nuts
  • 1 Prise(n) Fleur de Sel
  • 0.5 Stück Lime
  • 4 EL Pear Vinegar Preparation
  • 2 EL Olive oil
  • Salt
  • Pepper
  • 4 Pck. Beef carpaccio
  • 1 Pck. Cheese
  • 4 Handvoll Wild herb salad

Preparation (8 steps)

Prepare pears

Wash the pears and cut lengthwise into eight thin slices each. Set aside.

Caramelize pears

3 min/248°F/Speed 1 120

Put 1 tablespoon of brown sugar and 1 tablespoon of butter into the mixing bowl and caramelize for 3 min./120°C/speed 1.

Steam pears

Thermomix® Setting
5 min/212°F/Linkslauf Speed 1 100 Reverse

Add the pear slices to the mixing bowl and add 500 ml of white wine. Steam for 5 min./100°C/Reverse/speed 1. Then remove the pears from the mixing bowl and set aside.

Prepare nut caramel

Thermomix® Setting
4 min/248°F/Speed 2 120

Put 5 tablespoons of brown sugar in the mixing bowl and caramelize for 4 min./120°C/speed 2.

Add nuts

Thermomix® Setting
1 min/122°F/Linkslauf Speed 1 50 Reverse

Add a handful of mixed nuts and a pinch of Fleur de Sel and stir in for 1 min./50°C/Reverse/speed 1.

Roll out nut caramel

Pour the nut mixture onto a baking tray lined with baking paper, cover with a second piece of baking paper and roll out with a rolling pin. Let cool.

Prepare vinaigrette

Thermomix® Setting
10 sec/Speed 3

Squeeze half a lime. Put 4 tablespoons of pear vinegar preparation, 2 tablespoons of olive oil and the lime juice into the mixing bowl. Season with salt and pepper and stir for 10 sec./speed 3.

Arrange carpaccio

Arrange one packet of beef carpaccio on a plate each and season with salt and pepper. Place pear segments on top and crumble the cheese over it. Drizzle with vinaigrette and garnish with caramel.
