Description

This carrot cake for breakfast is prepared in the Thermomix® and is a healthy bread dish with carrots, dates, oatmeal, and apple sauce. The recipe is vegetarian and ideal for an autumnal breakfast or as a snack. The preparation time is 55 minutes, of which 20 minutes are active work. Suitable for those who prefer a light and healthy cuisine.

Ingredients (20 ingredients)

  • 550 ml Plant-based milk (e.g. unsweetened almond)
  • 50 g Dried pitted dates
  • 250 g Rolled oats (delicate)
  • 0.5 TL Baking powder
  • 150 g Medium-sized coarsely grated carrots
  • 160 g Apple sauce
  • 1 EL Ground flaxseed
  • 1 TL Grated ginger
  • 0.5 Stück Zest of lemon
  • 1 Stück Zest and juice of orange
  • 1 Prise Salt
  • 0.5 TL Cinnamon
  • 1 Prise Nutmeg
  • 250 g Skyr or coconut yogurt
  • 0.5 EL Maple syrup
  • 1 Stück Coarsely grated carrot
  • 1 Handvoll (Roasted) chopped walnut kernels
  • 1 etwas Vanilla (extract or pod)
  • 1 etwas Cinnamon powder
  • 50 g Roughly chopped walnut kernels

Preparation (7 steps)

Chop dates

Thermomix® Setting

Place 50 g of dried pitted dates in the mixing bowl and chop for 5 sec./speed 5.

Boil dates and plant-based milk

Thermomix® Setting
10 min/212°F/Speed 1 212°F

Add 550 ml of plant-based milk (e.g. unsweetened almond) to the chopped dates in the mixing bowl and cook for 10 min./100°C/speed 1.

Puree date milk

30 sec/Speed 8-10

Puree the date milk for 30 sec./speed 8-10, slowly increasing the speed.

Add remaining ingredients and mix

Add 250 g rolled oats (delicate), ½ tsp baking powder, 150 g coarsely grated carrots, 160 g apple sauce, 1 tbsp ground flaxseed, 1 tsp grated ginger, zest of ½ lemon, zest and juice of 1 orange, 1 pinch of salt, ½ tsp cinnamon and 1 pinch of nutmeg to the date milk in the mixing bowl and mix for 20 sec./speed 4/Reverse.

Bake

Pour the batter into a baking pan, smooth it out and bake in a preheated oven at 180°C circulating air for about 25 minutes. Then let it cool completely.

Prepare topping

Mix 250 g Skyr or coconut yogurt, some vanilla (extract or pod) and ½ - 1 tbsp maple syrup in a bowl.

Top oats

Spread the Skyr on the baked oats and sprinkle with 1 coarsely grated carrot, 50 g roughly chopped walnut kernels, a handful of (roasted) chopped walnut kernels and some cinnamon powder.
