Description

This dish is a real treat! Tender fish fillets, such as char or trout, are refined with an aromatic orange oil and cooked in the oven. It comes with a light fennel salad with anise and olives. The combination of sweet, sour and spicy flavors is simply irresistible. Perfect for a light lunch or a festive dinner. The fish is quick to prepare and the fennel provides a fresh note. An absolute favorite recipe that is always well received!

Ingredients (11 ingredients)

  • 300 g Fish fillet(s) (e.g. char or trout), with skin
  • 2 tbsp Olive oil
  • Salt
  • Pepper
  • 1 piece Large orange(s) organic, zest and juice of it
  • 1 Knolle/n Fennel
  • 1 tbsp Oil
  • 1 tsp Anise seeds
  • 100 ml Vegetable broth
  • 1 Handvoll Green or black olives, to taste
  • Herbs freshly chopped

Preparation (8 steps)

Grate orange zest and mix with oil

Wash the orange well, dry it and finely grate the zest with a grater. Put the grated orange zest, 2 tbsp olive oil, some salt and pepper into the mixing bowl and mix for 10 sec./speed 3.

Prepare fish

Brush the fish fillets with the orange oil mixture and place skin-side down in an ovenproof dish. Drizzle the remaining orange olive oil over it and cover with cling film.

Steam fish

Steam the fish in a preheated oven at 120 °C convection for about 15 minutes until translucent.

Prepare fennel

In the meantime, wash the fennel, halve it and remove the stalk. Cut the fennel into fine strips.

Sauté fennel

Put 1 tbsp oil in the mixing bowl, add the anise seeds and sauté for 3 min./120°C/speed 1.

Steam fennel

Thermomix® Setting
5 min/212°F/Speed 1 100 Reverse

Add the sliced fennel to the mixing bowl and sauté for 2 min./120°C/speed 1. Deglaze with the orange juice and the vegetable broth and steam for 5 min./100°C/speed 1/reverse.

Season fennel

Thermomix® Setting
10 sec/Speed 2 Reverse

Season the fennel with salt and pepper and mix in the olives. Mix for 10 sec./speed 2/reverse.

Arrange

Arrange the fennel on 2 plates and place the fish fillets on top. Sprinkle with the freshly chopped herbs.
