Description

These cheesecake sticks are a real eye-catcher at any party! The crispy shortcrust pastry base, the creamy cheesecake filling and the various chocolate coatings make them an irresistible dessert. I particularly like making them for birthdays or other festive occasions. The preparation is a bit more complex, but the result is definitely worth it. You can also decorate the sticks with different toppings, there are no limits to your imagination. Ideal for preparing in advance, as they need to be frozen before decorating.

Ingredients (14 ingredients)

  • 250 g Wheat flour Type 405
  • 160 g Butter (cold)
  • 180 g Sugar
  • 1 Pck. Vanilla sugar
  • 4 piece Eggs
  • 750 g Curd cheese
  • 250 g Cream
  • 50 g Cornstarch
  • 200 g Bittersweet chocolate coating
  • 200 g Whole milk chocolate coating
  • 200 g White chocolate coating
  • 3 tsp Coconut oil
  • 150 g various toppings (e.g. Easter eggs, gummy bears, cookies, sugar pearls)
  • 1 pinch Salt

Prepare shortcrust pastry

Put 200 g wheat flour type 405, 160 g cold butter in pieces, 30 g sugar, 1 pack. vanilla sugar, 1 egg and a pinch of salt in the mixing bowl and knead for 2 min./kneading setting to a shortcrust pastry.

Roll out shortcrust pastry and chill

Press the shortcrust pastry evenly onto the base of a greased springform pan (Ø 28 cm) and chill.

Prepare cheesecake filling

Thermomix® Setting
30 sec/Speed 4

Put 3 eggs, 750 g curd cheese, 250 g cream, 50 g cornstarch, 150 g sugar and 50 g wheat flour type 405 in the mixing bowl and stir for 30 sec./speed 4.

Bake cheesecake

Pour the cheesecake filling into the springform pan and bake in a preheated oven at 180 °C convection (200 °C top/bottom heat) for 1 hour. Then let it cool completely in the pan.

Portion and freeze cheesecake

Cut the cooled cake into 12 pieces, insert a wooden stick into each piece and freeze for 2 hours with some distance between them.

Melt chocolate coating

Chop 200 g bittersweet chocolate coating, 200 g whole milk chocolate coating and 200 g white chocolate coating separately. Place each variety in separate bowls with 1 tsp coconut oil and melt over a hot water bath.

Decorate cheesecake sticks

Coat the frozen cake pieces with the different types of chocolate coating and decorate with 150 g various toppings (e.g. Easter eggs, gummy bears, cookies, sugar pearls). Chill until serving.

Cheesecake on a stick – an idea that arose from the desire to spice up the classic cheesecake and make it more manageable. I remember always wanting the pieces of cake with the most frosting as a child. These cheesecake sticks are the perfect solution: everyone gets their own little work of art that they can decorate to their heart's content. The list of ingredients may seem long at first glance, but each component contributes to the overall experience. Wheat flour Type 405 forms the basis for the shortcrust pastry, which gets a pleasant, crumbly texture from the cold butter. The sugar provides the sweetness, while the vanilla sugar adds a subtle, aromatic note. The eggs bind the dough and the filling. The curd cheese is the heart of the cheesecake filling, providing the typical acidity and creaminess. The cream makes the filling even smoother, and the cornstarch provides the necessary stability during baking. The different chocolate coatings are responsible for the coating and offer a variety of flavors – from tart-bitter to delicately sweet. The coconut oil ensures a beautiful shine and better processing of the chocolate. And finally, the toppings: There are no limits to your imagination here! The preparation with the Thermomix® is very simple. The shortcrust pastry is perfectly kneaded in just a few minutes. Make sure the butter is really cold so that the dough doesn't get too warm. The cheesecake filling is also quick to prepare. It is important that all ingredients are well mixed together to create a homogeneous mass. Patience is required when baking. The cake should cool slowly so that it does not collapse. Freezing is an important step as it makes it easier to coat the sticks with chocolate. The chocolate coating should not be too hot, otherwise it will melt the frozen cake pieces. The recipe is already suitable for a vegetarian version. A vegan version is a little more complex as curd cheese, cream and eggs have to be replaced. Vegan curd cheese alternatives, plant-based cream and egg substitutes can be used here. You can experiment with the spices: lemon or orange peel, cinnamon or cardamom go perfectly with the cheesecake. Serve the cheesecake sticks on a beautiful plate or in small glasses. They go perfectly with fresh fruit, a dollop of cream or a chocolate sauce. They are a great eye-catcher at any party or as a sweet surprise in between. The cheesecake sticks can be stored in the refrigerator. They can also be prepared well in advance: The shortcrust pastry and the cheesecake filling can be prepared the day before. The frozen cake pieces can also be prepared a few days in advance and stored in the freezer. This means less stress on the day of the celebration.
