About this recipe

These lamb cake pops are a real hit at our house, especially when children's birthdays are coming up. The idea actually came about out of necessity: I had half a cake base left over and didn't want to just throw it away. So I started experimenting with different ingredients until these little, woolly friends came out. The light cake base forms the basis for the cake pops. It provides the necessary sweetness and a loose texture. The butter and cream cheese, which we stir into a creamy mass in the Thermomix®, bind everything together and give the cake pops a juicy consistency. The icing sugar adds extra sweetness, while the lemon juice adds a pleasant acidity that balances the whole thing. The white chocolate serves not only as a coating, but also as "glue" for the popcorn, which represents the woolly fur of the sheep. The popcorn provides a nice contrast in texture and a slightly salty taste that goes well with the sweetness of the chocolate. The pretzel sticks are not only decoration, but also a crunchy accent that makes the cake pops even more interesting. When preparing in the Thermomix®, it is important that the butter is really soft so that it combines well with the cream cheese and icing sugar. If the mixture seems too dry, you can add a dash of milk or cream. When mixing the cake base crumbs with the cream, make sure that everything is well mixed, but not for too long, otherwise the dough may become too sticky. The balls are best formed with slightly damp hands. The cooling time is important so that the balls become firm and can be better covered with chocolate. When melting the chocolate in the Thermomix®, you should keep a close eye on the temperature so that it does not burn. If you want to try a vegan version, you can replace the cake base with a vegan cake and use vegan alternatives instead of butter and cream cheese. The white chocolate must then also be replaced with a vegan variety. For a gluten-free version, you can use a gluten-free cake base. In terms of taste, you can also vary the cake pops by adding, for example, some vanilla extract or almond flavor to the cream. The lamb cake pops are a great eye-catcher on every buffet. You can arrange them individually on small plates or put them in a cake pop stand. They go well with other sweet treats such as muffins, cupcakes or cookies. The finished cake pops can be stored in the refrigerator. They will keep there for about 2-3 days. You can also prepare and freeze the dough balls. When needed, simply thaw and process as described.
