Description

This chicken in Thai sweet and sour sauce is a dish that I often prepare when I want something tasty and easy to make. The sauce, with its mix of sweet, sour and spicy, goes perfectly with the chicken. I serve it on a bed of fresh lettuce, but it can also be accompanied with basmati rice. The preparation is quick, about 20 minutes, and the cooking takes a little longer, but it's worth it. Perfect for an informal dinner with friends or for a quick and tasty lunch. An explosion of oriental flavors directly in your kitchen!

  • Carrots
  • Onions
  • Celery
  • Mixed pepper
  • Garlic
  • Salt
  • Spring onions
  • Hot red chilli pepper
  • Lemon juice
  • Fish sauce
  • Sugar

Preparation of the vegetables

Thermomix® Setting

Insert the carrots, onion and celery into the bowl. Close the lid and chop for 5 Sec./Stufe 5.

Cooking the chicken

Transfer the chopped vegetables to a pressure cooker. Add the chicken, mixed peppercorns, garlic cloves and salt. Fill the pot with water until the chicken is covered. Close the pressure cooker and cook over the heat for about 40 minutes from the whistle.

Preparation of the cooked chicken

Once cooked, remove the chicken from the pressure cooker and cut it into pieces. Set aside.

Preparation of the sauce

Squeeze the lemon juice (about two tablespoons) into a bowl.

Chop the spring onions

Clean the spring onions, remove the outer leaves and chop them finely in the bowl for 3 Sec./Stufe 6. Transfer the chopped spring onions to the bowl with the lemon juice.

Addition of fish sauce

Add the fish sauce to the bowl with the spring onions and lemon juice. Mix well to blend the flavors.

Chop the chilli pepper

2 sec/Speed 7

Finely chop the hot red chilli pepper in the bowl for 2 Sec./Stufe 7. Add the chopped chilli pepper to the sauce.

Adjust the consistency and flavour

If the sauce is too thick, thin it with more lemon juice and fish sauce. Add the sugar and mix. Set the sauce aside to rest and flavour.

Preparation of the dish

Wash some leaves of romaine lettuce or other salad as desired, cut it and arrange it on the serving dish.

Serve

Place the pieces of chicken on top of the salad and drizzle everything with the Thai sauce made previously. Serve immediately.
