These chicken rolls are a delightful Mediterranean-inspired dish, perfect for a special occasion or a weekend brunch. I've been making this recipe for years, and it's always a hit! The combination of artichoke hearts, feta cheese, capers, and olives creates a flavorful filling that complements the tender chicken beautifully. The chicken marinates overnight, infusing it with delicious Italian flavors. While the marinating takes time, the active preparation is quite quick. This dish is ideal for those who enjoy a savory and satisfying meal with a touch of elegance.

Ingredients (6 ingredients)

  • 453.592 g skinless, boneless chicken breast halves
  • 236.588 ml Italian-style salad dressing
  • 198.447 g artichoke hearts, drained and chopped
  • 85.048 g sliced olives, drained
  • 113.398 g capers, drained
  • 113.398 g crumbled feta cheese

Preparation (6 steps)

Marinate the Chicken

Place the chicken breast halves into a plastic zipper bag. Shake the bottle of Italian dressing and pour into the bag. Seal the bag and shake to thoroughly coat the chicken with the dressing; refrigerate at least 8 hours or overnight.

Preheat Oven

Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish with olive oil.

Pound Chicken Breasts

Remove the chicken breast halves and shake off excess marinade. Discard the leftover marinade. Place the chicken between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to a thickness of 1/2 inch.

Prepare the Filling

Mix together the artichoke hearts, olives, capers, and feta cheese in a bowl.

Stuff and Roll Chicken

Spoon about 2 tablespoons of the feta mixture into the middle of each flattened chicken breast. Roll each chicken breast around the filling and secure with toothpicks. Place the rolled chicken breasts into the prepared baking dish.

Bake the Chicken

Bake in the preheated oven until the chicken has browned and the juices run clear, about 30 minutes.
