Description

This dish is a wonderful way to prepare chicory in a different way. The slightly bitter note of the chicory harmonizes perfectly with the spicy caper sauce and the salty ham. I like to make it when I need something quick and still want something healthy on the table. The rice makes the dish filling. If you like, you can sprinkle some fresh parsley over it. A real treat for cold days!

Ingredients (11 ingredients)

  • 50 g Long grain rice
  • 1 pinch Salt
  • 2 Kolben Chicory
  • 0.25 l clear broth (instant)
  • 2 tbsp White wine
  • 1 tsp Flour
  • 1 tbsp Capers
  • 1 tbsp Crème fraîche
  • 1 slice Ham
  • 1 pinch white Pepper
  • 1 pinch Sugar

Preparation (7 steps)

Cook rice

Thermomix® Setting
20 min/212°F/Speed 1 100

Put 50 g long grain rice and a pinch of salt into the simmering basket. Fill 500 ml water into the mixing bowl, insert the simmering basket and cook for 20 min./100°C/speed 1.

Prepare chicory

While the rice is cooking, clean and wash 2 heads of chicory (approx. 300 g).

Steam chicory

Thermomix® Setting
12 min/Varoma/Speed 1 Varoma

Remove the rice from the mixing bowl and set aside. Add 250 ml clear broth (instant) and 2 tbsp white wine to the mixing bowl. Place the prepared chicory in the Varoma container, attach and steam for 12 min./Varoma/speed 1.

Keep chicory warm

Remove the chicory from the Varoma, drain and keep warm briefly.

Prepare sauce

Thermomix® Setting
3 min/212°F/Speed 2 100

Put 125 ml vegetable stock (from the Varoma stock) into the mixing bowl. Stir 1 tsp flour with a little water until smooth, add to the mixing bowl and cook for 3 min./100°C/speed 2.

Refine sauce

Thermomix® Setting
1 min/194°F/Linkslauf Speed 1 90 Reverse

Add 1 tbsp crème fraîche, 1 slice (approx. 60 g) ham cut into strips and 1-2 tbsp capers to the mixing bowl and stir in for 1 min./90°C/reverse speed 1.

Season and serve

Season the sauce with salt, white pepper and 1 pinch of sugar. Serve the chicory in the sauce and serve the rice with it.
