Description

This chocolate and honey mousse is a decadent and easy to prepare dessert, perfect for special occasions or simply to treat yourself. I love the combination of rich chocolate and fragrant honey, which brings a natural sweetness and a unique touch to this classic. The texture is incredibly light and airy, thanks to the whipped cream and the egg whites beaten until stiff. It's a dessert I often make for the holiday season because it's always very popular. Preparation takes about 30 minutes, but allow at least 3 hours of refrigeration for the mousse to set well. A real delight!

Ingredients (8 ingredients)

  • 100 g Chocolate
  • 5 feuille Gelatin
  • 125 ml Milk
  • 100 g Honey
  • 3 piece Egg(s)
  • 50 g Icing sugar
  • 20 cl Liquid cream
  • 1 pinch Salt

Preparation (13 steps)

Soften the gelatin

Soften the gelatin sheets in a bowl of cold water. Set aside.

Grate the chocolate

Put the chocolate in the Thermomix bowl and grate for 5 Sek./Stufe 8. Transfer and set aside.

Heat the milk and honey

3 min/194°F/Speed 2 90

Pour the milk and honey into the Thermomix bowl. Heat for 3 Min./90°C/Stufe 2.

Dissolve the gelatin

Thermomix® Setting
20 sec/Speed 3

Add the softened and drained gelatin to the milk-honey mixture in the Thermomix bowl. Mix for 20 Sek./Stufe 3.

Prepare the egg yolks

Break the eggs, separating the whites from the yolks in two different salad bowls. Add the sugar to the yolks and mix with a whisk until the mixture whitens. Set aside.

Incorporate the warm milk into the yolks

Pour the lukewarm milk-honey mixture gently over the sweetened egg yolks, stirring constantly. Put everything back in the Thermomix bowl.

Cook the custard

Cook the custard for 5 Min./80°C/Stufe 2.

Beat the egg whites until stiff

Thermomix® Setting
3 min/Speed 3.5

Insert the whisk into the Thermomix bowl. Add the egg whites and a pinch of salt. Beat the egg whites until stiff for 3 Min./Stufe 3.5.

Whip the cream into whipped cream

Thermomix® Setting
2 min/Speed 3.5

Pour the cold liquid cream into the clean, dry Thermomix bowl. Insert the whisk. Whip the cream into whipped cream for 2 Min./Stufe 3.5. Monitor the consistency.

Incorporate the elements

Gently incorporate the whipped cream, then the egg whites into the honey preparation. Use a spatula to mix gently.

Add the chocolate

When everything is well mixed, add the grated chocolate chips and mix gently with a spatula.

Refrigerate

Pour the mousse into a cake pan. Place in the refrigerator for a minimum of 3 hours.

Serve

Just before serving, unmold the mousse onto a very cold dish and cut into slices.
