Description

I love preparing these sandwiches with chicken and caramelized onions! The sweetness of the onions perfectly matches the flavor of the chicken and the creaminess of the cheese. Perfect for a quick lunch or an informal dinner with friends. The preparation takes some time to caramelize the onions, but the final result is truly delicious. They can be prepared in advance and heated when ready to serve. A delicious idea for a sandwich different from the usual, which everyone will like!

Ingredients (12 ingredients)

  • 4 piece Ciabatta bread (200 g sections)
  • 500 g Chicken breast
  • 300 g Onion
  • 1 piece Salad tomato
  • 8 slice Cheese
  • 1 pinch Salt
  • 1 pinch Pepper
  • 100 ml Barbecue sauce
  • 30 ml Extra virgin olive oil
  • 50 ml Water
  • 20 g Brown sugar
  • 2 tbsp Balsamic vinegar

Preparation (11 steps)

Preparation of the onions

Clean the onions, removing the hardest outer layers and the ends. Divide the onions in half and slice them to a thickness of about 1 centimeter.

Initial cooking of the onions

Transfer the sliced onions to the Mixtopf. Add extra virgin olive oil (about 30 ml), water (50 ml), brown sugar (20 g) and salt (a pinch). Mix well with the spatula.

Cooking the onions (first phase)

Cook the onions with the lid on for 20 minutes/100°C/Stufe 1.

Cooking the onions (second phase)

45 min/212°F/Speed 1 100

Remove the lid and continue cooking for another 45 minutes/100°C/Stufe 1. Stir frequently with the spatula to prevent them from sticking.

Deglazing with balsamic vinegar

Thermomix® Setting
2 min/Varoma/Speed 1 Varoma

Raise the temperature to Varoma, add 2 tablespoons of balsamic vinegar and cook for 2 minutes/Varoma/Stufe 1, without the measuring cup, to evaporate the alcoholic part.

Deglaze the bottom

If the onions begin to stick to the bottom, add very little water (about 20 ml) and stir with the spatula to deglaze the bottom. Transfer the caramelized onions to a bowl and set aside.

Preparation of the bread

Divide the ciabatta bread (about 200 g per section) in half and lightly grill the inside part on a non-stick grill. Set aside.

Cooking the chicken

Cook and grill the slices of chicken breast on a hot non-stick grill on both sides. Salt and pepper to taste. Set aside.

Preparation of the tomato

Slice the salad tomato and keep it ready for use.

Assembling and heating the sandwiches

Preheat the static oven to 200°C. Place a slice of salad tomato, the slice of chicken breast and 2 slices of cheese on top of the base of each sandwich. Transfer the sandwiches to a grill and put them in the hot oven for about 6-7 minutes, just long enough to allow the cheese to melt.

Final filling and serving

Remove the sandwiches from the oven and finish filling with the caramelized onions. Sprinkle with barbecue sauce to taste. Close the sandwich and serve immediately.
