Description

Cicerchiata is a traditional Italian dessert, especially widespread during the Carnival period. These are small fried dough balls, then joined together with honey and decorated with colored sprinkles. The preparation is a bit laborious, but the result is truly delicious and perfect for sharing a festive moment with friends and family. I have been preparing it for years and every time it is a success! Its crunchiness and the sweet taste of honey make it irresistible. Try it, you won't regret it!

Ingredients (7 ingredients)

  • Eggs
  • Icing sugar
  • Flour 00
  • to taste Extra virgin olive oil
  • Honey
  • Peanut seed oil
  • Colored sprinkles

Preparation (7 steps)

Preparation of the dough

Thermomix® Setting
20 Sec./Speed 4, 2 min/Funzione Spiga

In the Thermomix bowl, insert the eggs, icing sugar and 4 tablespoons of extra virgin olive oil. Set 20 Sec./Speed 4 to mix the ingredients. Gradually add 150g of flour 00 and set 2 Min./Knead function. If necessary, add up to a maximum of 50g of flour 00, a little at a time, until a soft dough is obtained.

Processing and resting the dough

Transfer the dough to a lightly floured pastry board and knead it briefly with your hands until a smooth and homogeneous mixture is obtained. Form a ball, wrap it in transparent film and let it rest at room temperature for about 30 minutes.

Formation of cicerchi

After resting, take the dough again and divide it into smaller portions. Work each portion to form thin strands. Cut the strands into small pieces, the size of a chickpea.

Frying the cicerchi

Heat plenty of peanut seed oil in a large pot. When the oil is hot, pour in the pieces of dough, a few at a time, and fry them until golden brown. Use a slotted spoon to remove the fried balls and place them on absorbent paper to remove excess oil.

Melt the honey

In the clean Thermomix bowl, pour the honey. Set 3 Min./50°C/Speed 2 to melt it.

Combine the fritters with honey

Thermomix® Setting
1 min/Linkslauf/Speed 1 Reverse

Add the fritters to the bowl with the melted honey. Set 1 Min./Reverse/Speed 1 to gently mix, making sure all the balls are coated with honey.

Form and decorate the cicerchiata

Transfer the cicerchiata to a serving tray and shape it into the desired shape (doughnut, pyramid, etc.). Decorate with colored sprinkles.
