Description

This Murcian stew with meatballs, or 'balls' as we call them here, is a winter dish that comforts the soul. I have been preparing it for years and it is always a success at home, especially at Christmas. The meatballs, made with pork, liver and spices, give it a unique and delicious touch. Although it takes time, most of it is slow cooking, so it does not require much attention. Go ahead and try this traditional recipe and surprise your guests with a dish full of flavor and tradition!

Ingredients (21 ingredients)

  • 500 g green beans
  • 1 trozo totanera squash
  • 1 piece turkey (around 1 kg)
  • 1 piece beef knuckle
  • 100 g lean bacon
  • 1 piece sausage
  • 1 kg small potatoes
  • 1 piece celery
  • 1 piece thistle
  • 1 pinch salt
  • 1 pinch saffron
  • 1 kg chickpeas
  • 100 g bacon
  • 3 piece eggs
  • 1 piece pine nuts
  • 100 g pork
  • 1 pinch pepper
  • 1 piece turkey liver
  • 2 clove garlic
  • 1 trozo fresh bread
  • 1 piece parsley

Preparation (10 steps)

Initial preparation of the chickpeas and meats

Thermomix® Setting
60 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

In the Thermomix bowl, add 3 liters of water. Incorporate 1 kg of chickpeas, a beef knuckle, half a turkey (approximately 1 kg), 100 g of lean bacon and a pinch of salt. Program 60 Min./100°C/Turn to the left/Spoon speed.

Add the vegetables

30 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Add 500 g of green beans, celery and thistle to the bowl. Program 30 Min./100°C/Turn to the left/Spoon speed.

Incorporate potatoes, sausage and squash

Thermomix® Setting
10 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Add 1 kg of small potatoes, a sausage, a piece of totanera squash and a pinch of saffron to the bowl. Program 10 Min./100°C/Turn to the left/Spoon speed.

Final cooking with the meatballs

Thermomix® Setting
15 min/212°F/Giro a la izquierda/Velocidad cuchara 100 Reverse

Carefully add the meatballs (balls) to the bowl. Program 15 Min./100°C/Turn to the left/Spoon speed, or until the potatoes are tender.

Preparation of the broth

Remove the broth from the bowl and place it in a separate saucepan. Clean the Thermomix bowl.

Flavoring the broth

Add 2 cloves of garlic and a sprig of parsley, all very finely chopped, to the saucepan with the broth. Cook over low heat for 5 minutes.

Cooking the noodles (optional)

If you want to add noodles, add 100 g of thin noodles, broken by hand, to the broth and cook for 6-7 minutes, or until they are al dente.

Preparation of the meatballs (balls)

In the Thermomix bowl, add 100 g of bacon, 100 g of pork, a turkey liver and 2 cloves of garlic. Program 10 Sec./Speed 7 to chop the ingredients.

Mix the meatball ingredients

Thermomix® Setting

Add chopped parsley, 3 eggs, pine nuts, a piece of fresh bread soaked in milk, pepper and salt to the bowl. Mix 20 Sec./Speed 4.

Form the meatballs

Remove the mixture from the bowl and knead with your hands. Form the meatballs (balls) not very large, since they will increase in size during cooking.
