Description

This cognac braised chicken is a comforting and flavorful dish, perfect for a family meal or a special dinner. The combination of tender chicken with vegetables and the aromatic touch of cognac makes it a delicious culinary experience. I often prepare it in autumn and winter, when you fancy a hot and nutritious dish. It is very easy to do with the Thermomix®, and the result is always spectacular. Go ahead and try it, you will love it! You can accompany it with white rice or mashed potatoes for a complete meal.

Ingredients (10 ingredients)

  • 8 piece chicken pieces
  • 2 piece carrot
  • 1 piece onion
  • 500 ml white wine
  • 150 ml cognac
  • 2 tbsp oil
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch oregano
  • 1 pinch cumin

Preparation (6 steps)

Prepare the vegetables

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 4

Peel and cut the onion into quarters. Peel and slice the carrots. Introduce the onion in the Thermomix bowl and chop 3 sec./level 5. Add the carrots and chop 3 sec./level 4.

Sauté the vegetables

Thermomix® Setting

Add the oil to the Thermomix bowl and sauté the vegetables 5 Min./120°C/level 1.

Brown the chicken

Clean and cut the chicken into medium pieces. In a large frying pan, heat the oil over medium-high heat. Add the chicken pieces and brown them on all sides until they are well browned. Remove the chicken from the pan and reserve.

Add the chicken and condiments

Add the browned chicken to the Thermomix bowl. Add salt and pepper to taste. Add oregano and cumin (optional).

Add the liquids and cook

Thermomix® Setting

Add the white wine and cognac to the Thermomix bowl. Program 25 Min./100°C/level 1.

Serve

Pour the chicken with cognac into a large plate. Serve hot.
