Description

This cold pasta is an explosion of summer flavors! The sweetness of yellow peppers blends perfectly with the freshness of mozzarella and the lively touch of lemon. I often prepare it during the summer season, it is a perfect single dish for a light lunch or an informal dinner with friends. The pepper cream, prepared with the Thermomix®, is velvety and enveloping. You can also use another type of pasta, such as dried pasta, but I prefer fresh egg pasta for an even tastier result. An extra idea? Add a few fresh basil leaves for an even more intense aroma!

Ingredients (7 ingredients)

  • Fresh egg pasta
  • Yellow peppers
  • Cherry mozzarella balls
  • 0.5 piece Lemon (juice)
  • Parsley
  • 3 tbsp Extra virgin olive oil
  • Salt

Preparation of the peppers

Preheat the oven to 180°C. Wash and dry the yellow peppers well with a clean cloth.

Baking the peppers

Arrange the whole peppers on the oven rack and cook for 30 minutes at 180°C. Once cooked, remove them from the oven and let them cool slightly.

Cooking the pasta

Pour plenty of water into a pot and bring to a boil. Add a pinch of coarse salt and the fresh egg pasta. Cook for about 3 minutes or according to the package directions.

Cooling the pasta

Drain the pasta al dente and dress with 3 tablespoons of extra virgin olive oil. Mix well and let it cool completely.

Preparation of the pepper cream

Remove the stalk from the peppers, peel them and clean them of the internal seeds. Put the cleaned peppers in the Thermomix bowl.

Creating the pepper cream

Add a drizzle of olive oil, the juice of half a lemon and a pinch of salt to the bowl. Blend for 20 Sec./Stufe 8 until you get a smooth and homogeneous cream.

Chop the parsley

Wash and dry the fresh parsley. Put the parsley in the bowl and chop for 3 Sec./Stufe 7.

Season the pasta

Season the cold pasta with the pepper cream, chopped parsley and mozzarella balls. Mix well to combine all the ingredients.
