Description

This persimmon salad with feta and pomegranate is a vegetarian appetizer with Mediterranean flavors, prepared in the Thermomix®. The combination of sweet persimmon, salty feta and crunchy pomegranate seeds makes this salad a special taste experience. In just 20 minutes, the dish is ready for 4 people. Ideal as a light meal, finger food or as part of an autumnal or Christmas menu.

Ingredients (8 ingredients)

  • 0.5 Pomegranate
  • 50 g Pine nuts
  • 1 Orange
  • 4 Persimmon
  • 100 g Feta
  • 15 g Mint
  • 1 Prise(n) Salt
  • 1 Prise(n) Pepper from the mill

Preparation (5 steps)

Roast pine nuts

Roast the 50 g of pine nuts in a pan without fat until golden yellow and then set aside. No Thermomix use in this step.

Squeeze orange

Squeeze the 1 orange. Collect the orange juice in a small bowl. No Thermomix use in this step.

Chop mint

Thermomix® Setting
3 sec/Speed 5

Wash the 15 g of mint, pat dry and put into the mixing bowl. Chop for 3 sec./level 5. Then transfer.

Prepare persimmon

Wash the 4 persimmons and cut across into very thin slices. Distribute the persimmon slices on 4 plates. No Thermomix use in this step.

Arrange

Crumble the 100 g feta and place on top of the persimmon. Sprinkle pomegranate seeds and roasted pine nuts over it and drizzle with the orange juice. Sprinkle the chopped mint over it and season with salt and pepper from the mill. No Thermomix use in this step.
