Description

This chicken asparagus composition is a wonderfully light and spring-like dish that is quick to prepare in the Thermomix®. I especially like to make it when asparagus season begins and you can fully enjoy the fresh flavors. The tender chicken, wrapped in savory ham, harmonizes perfectly with the crisp asparagus. The creamy sauce with a hint of Italian herbs rounds off the dish. It is ideal for a quick weeknight dinner or even for a more festive meal with guests. Potatoes, rice or pasta go well with it - according to taste!

Ingredients (12 ingredients)

  • 200 g Asparagus, white
  • 300 g Asparagus, green
  • 400 g Chicken cutlet mini, or chicken inner fillets
  • Salt and pepper
  • 100 g Raw ham of your choice (e.g. Black Forest, Proscciutto, Parma or Serrano ham)
  • Olive oil
  • 1 tsp Butter
  • 200 ml Cream
  • 100 ml Milk
  • 1 tsp Sugar
  • 1 tsp Herbs, Italian
  • 1 tsp Cornstarch

Preparation (5 steps)

Prepare asparagus

Peel 200 g white asparagus and cut off the ends. Wash 300 g green asparagus, cut off the hard ends and cut the stalks into approx. 2 - 3 cm pieces. Set the asparagus aside.

Prepare meat

Wash 400 g chicken cutlet mini or chicken inner fillets and pat dry. Season with salt and pepper on both sides. Wrap each mini steak with a slice of ham.

Sauté asparagus

2 min/248°F/Speed 1 120

Put 1 tsp butter in the mixing bowl and melt for 3 min./120°C/speed 1. Add the prepared asparagus and sauté for 2 min./120°C/speed 1.

Prepare sauce

Thermomix® Setting
5 min/194°F/Speed 2 90

Add 200 ml cream, 100 ml milk, 1 tsp sugar and 1 tsp Italian herbs to the mixing bowl and simmer for 5 min./90°C/speed 2.

Thicken sauce

Thermomix® Setting
2 min/194°F/Speed 3 90

Mix 1 tsp cornstarch with some cold water. Set the Thermomix to speed 3 and slowly add the cornstarch until the desired consistency is reached. Leave the temperature at 90°C and simmer for another 2 min./90°C/speed 3.

This chicken asparagus composition is a real spring dish for me, which I always enjoy preparing. I remember how my grandmother used to eagerly await asparagus season and then spoil the whole family with delicious asparagus dishes. This recipe is a tribute to this tradition, modernized and simplified by the Thermomix®. The white asparagus, with its fine, slightly bitter taste, forms the basis of the dish. It is peeled to remove the woody parts and emphasize its delicate texture. Green asparagus, on the other hand, brings a crisp freshness and a slightly grassy note. It does not need to be peeled, which speeds up preparation. The chicken, wrapped in savory raw ham, provides a spicy component and a pleasant texture. When fried, the ham releases a delicious aroma that blends wonderfully with the asparagus. The preparation in the Thermomix® is very simple. Be careful not to steam the asparagus for too long so that it retains its crisp consistency. The sauce is made creamy and mild by the cream and milk. The Italian herbs give it a Mediterranean touch that goes perfectly with the asparagus and chicken. The cornstarch is used to bind the sauce and give it a smooth consistency. Be sure to add the cornstarch slowly to avoid lumps. For a vegetarian option, you can replace the chicken with tofu or halloumi. The ham can be replaced with smoked tofu or vegan bacon. Instead of Italian herbs, you can also use fresh herbs such as parsley, chives or chervil. A squeeze of lemon juice in the sauce provides additional freshness. Boiled potatoes, rice or pasta go well with this chicken asparagus composition. A fresh salad with a light dressing is also a good addition. A glass of dry white wine rounds off the dish perfectly. Leftovers of the chicken asparagus composition can be stored in the refrigerator and reheated the next day. The dish is also good for preparation. You can prepare the asparagus and chicken the day before and store them in the refrigerator. The sauce can also be prepared and heated shortly before serving.
