Description

This recipe for entrecote with herb salsa and grilled asparagus is an absolute highlight for every barbecue evening! The juicy beef harmonizes perfectly with the fresh herb salsa and the crunchy asparagus. I always make the herb salsa with lots of fresh parsley, coriander and mint - this gives the dish a special touch. The asparagus becomes nice and tender on the grill and gets a slightly smoky aroma. A feast for all meat lovers and perfect for special occasions!

Ingredients (11 ingredients)

  • 800 g Beef entrecote
  • 3 clove Garlic
  • 0.5 Bd. Parsley
  • 0.5 Bd. Coriander
  • 15 g Mint
  • 1 piece Organic lemon
  • 4 tbsp Olive oil
  • to taste Fleur de Sel
  • to taste Pepper
  • 800 g Green asparagus
  • 500 g Cherry tomatoes (4 bunches)

Preparation (8 steps)

Prepare garlic and herbs

Thermomix® Setting
3 sec/Speed 7

Put 3 cloves of garlic in the mixing bowl and chop for 3 seconds/speed 7. Scrape down with the spatula.

Prepare herb salsa

Thermomix® Setting
5 sec/Speed 5

Put 0.5 bunch of parsley, 0.5 bunch of coriander and 15 g of mint in the mixing bowl and chop for 5 seconds/speed 5. Scrape down with the spatula.

Refine herb salsa

Thermomix® Setting
10 sec/Speed 3

Add 2 tbsp lemon juice, 4 tbsp olive oil, Fleur de Sel and pepper to the herbs in the mixing bowl and stir for 10 seconds/speed 3.

Prepare asparagus and tomatoes

Wash 800 g of green asparagus and cut off the ends. Wash 500 g of cherry tomatoes (4 bunches).

Prepare grilling

Preheat grill. Take 800 g Black Premium Beef Entrecote out of the refrigerator about 1 hour before preparation.

Grill asparagus and tomatoes

Grill asparagus all around on the grill for about 8 minutes. Add tomatoes to the grill 5 minutes before the end.

Grill entrecote

Place entrecote on the grill and turn after 2-3 minutes. For a diamond pattern, turn the meat 45° after half the time. Now push the meat to the side and let it cook through to the desired core temperature. Season with salt and pepper on both sides.

Serve

Serve entrecote with asparagus and tomatoes, drizzle with herb salsa.
