Description

Applesauce layered with cinnamon curd cream and almond brittle.

Ingredients (11 ingredients)

  • 2 Stück Apples
  • 1 Stück Lemon
  • 170 g brown Sugar
  • nach Geschmack Cinnamon
  • 1 Pck. Vanilla sugar
  • 200 g Low-fat curd
  • 150 g Whipping cream
  • 1 EL Butter
  • 100 g Slivered almonds
  • 40 g Powdered sugar
  • 50 ml Water

Preparation (9 steps)

Prepare apples

Peel, core and dice the apples. Halve the lemon and squeeze the juice. Drizzle the apple cubes with the lemon juice to prevent browning.

Cook applesauce

15 min/212°F/Speed 1 100

Put the apple cubes, 120 g brown sugar, some cinnamon and ½ packet of vanilla sugar together with 50 ml of water in the mixing bowl and cook for 15 Min./100°C/Stufe 1.

Puree applesauce

10 sec/Speed 8

After cooking, puree the applesauce for 10 Sec./Stufe 8.

Reduce applesauce

Thermomix® Setting
5 min/212°F/Speed 1 100

Let the applesauce simmer for another 5 Min./100°C/Stufe 1 without the measuring cup in the lid so that excess liquid can evaporate.

Prepare curd cream

Thermomix® Setting
20 sec/Speed 3

Put the low-fat curd, 50 g brown sugar, some cinnamon and the remaining ½ packet of vanilla sugar in the mixing bowl and stir for 20 Sec./Stufe 3. Empty the mixing bowl and transfer the cream.

Whip cream

Thermomix® Setting
2 min/Speed 3.5

Insert the butterfly. Pour the whipping cream into the mixing bowl and whisk until stiff for 2 Min./Stufe 3.5. Keep an eye on the cream so that it does not turn into butter.

Fold in cream

Carefully fold the whipped cream into the curd cream with a spatula.

Make almond brittle

Put the slivered almonds and butter in a pan and roast over medium heat. Dust with the powdered sugar and let it caramelize while stirring. Then let it cool on a piece of baking paper.

Layer dessert

Layer applesauce and cream alternately in dessert glasses. Finally, sprinkle with the almond brittle and serve.
