Description

This hearty game stew is a real centerpiece for cold days! I especially like to make it in autumn and winter when the game is particularly aromatic. The combination of venison shoulder, wild boar knuckles, and red deer neck makes the stew incredibly flavorful. Add to that spicy game sausages and Krakauer. The long simmering ensures that the meat becomes incredibly tender and the flavors blend perfectly. A feast for all meat lovers and perfect for a cozy meal with friends or family. The pearl barley and vegetables make the stew a complete meal.

Ingredients (19 ingredients)

  • 1 x Venison shoulder
  • 2 x Wild boar knuckles
  • 1 x Red deer neck
  • 10 x Vienna sausages, game
  • 5 x Krakauer sausage, game
  • 1 Bündel Soup vegetables, carrots, celery, leek, parsley, onion
  • 1 Bündel Lovage
  • 1 x Garlic bulb
  • 1 Bündel Vegetables as soup garnish, carrots, celery, leek, peas
  • 250 Gramm Kale
  • 200 Gramm Pearl barley
  • 5 x Large, waxy potatoes
  • 7 EL Salt
  • 1 TL Mustard seeds
  • 2 Blatt Bay leaf
  • 3 x Allspice berries
  • 3 x Cloves
  • 1 EL Sugar
  • Pepper

Preparation (8 steps)

Chop soup vegetables

Thermomix® Setting

Cut the soup vegetables (carrots, celery, leek, onion) into coarse pieces and place in the mixing bowl. Chop for 5 sec/speed 5. If necessary, push down with the spatula and repeat the process.

Prepare game and spices

Place venison shoulder, wild boar knuckles, and red deer neck in a large pot. Add the halved garlic bulb, a handful of lovage, 1 tbsp sugar, 7 tbsp salt, 1 tsp mustard seeds, 2 bay leaves, 3 allspice berries, and 3 cloves.

Simmer game

Fill the pot with cold water (approx. 8 liters) and slowly bring to a simmer. Simmer on medium heat with a lid for 2 hours. Do NOT perform this step in the Thermomix®.

Prepare meat

Remove the game from the soup and let it cool briefly. Pluck the meat from the bones and cut into smaller pieces if necessary. Slice the Vienna sausages and Krakauer.

Strain soup

Strain the soup through a fine sieve or kitchen towel. Do NOT perform this step in the Thermomix®.

Refine soup

Return the strained soup to the mixing bowl. Add the prepared meat, sausage slices, vegetables for the soup garnish (carrots, celery, leek, peas), kale, and pearl barley. Simmer for 30 min/100°C/speed 1.

Add potatoes

20 min/212°F/Speed 1 100

Peel and dice the potatoes and add to the mixing bowl. Simmer for another 20 min/100°C/speed 1 until the potatoes are cooked.

Season

5 sec/Speed 3 Linkslauf Reverse

Season the stew with salt, pepper, and a little sugar if necessary. Add some more lovage if needed and stir in for 5 sec/speed 3/reverse.
