Description

This hearty potato vegetable soup is a real soul food! With fresh vegetables such as potatoes, carrots, celery and leek, it is not only tasty, but also rich in vitamins. The sausages make the soup a filling meal that warms especially on colder days. I like to make it when I need to be quick and still want to put something healthy on the table. A few fresh herbs such as marjoram round off the taste perfectly. The soup is ideal for the whole family and can be prepared well.

Ingredients (11 ingredients)

  • 200 g Green beans
  • 200 g Carrot(s)
  • 500 g Potato(es)
  • 1 l Vegetable broth
  • 200 g Leek
  • 4 piece Vienna sausages
  • 200 g Celeriac
  • 6 Stiele Marjoram
  • to taste Salt
  • to taste Pepper
  • to taste Nutmeg

Preparation (7 steps)

Prepare vegetables

Wash, clean and cut the beans into small pieces. Peel, wash and slice the carrots. Peel, wash and dice the potatoes. Clean, wash and cut the leek into rings. Peel, wash and dice the celery. Cut the sausages into slices.

Heat vegetable broth

Thermomix® Setting

Add 1 liter of vegetable broth to the mixing bowl and heat for 5 Min./100°C/speed 1.

Cook potatoes

Thermomix® Setting
15 min/212°F/Speed 1 100

Add the potato cubes to the hot vegetable broth and cook for 15 Min./100°C/speed 1.

Remove and puree potatoes

Thermomix® Setting
30 sec/Speed 8

Use a slotted spoon to remove half of the potatoes from the broth and set aside. Puree the remaining potatoes in the broth for 30 sec./speed 8.

Add vegetables and simmer

10 min/212°F/Linkslauf Speed 1 100 Reverse

Add beans, carrots, leek and celery to the soup and simmer for 10 Min./100°C/reverse rotation speed 1.

Add sausages and potatoes

Thermomix® Setting
2 min/212°F/Linkslauf Speed 1 100 Reverse

Add the sausage slices and the remaining potato cubes to the soup and heat for 2 Min./100°C/reverse rotation speed 1.

Season and serve

Wash the marjoram, pat dry, pluck the leaves and chop roughly. Season the soup with marjoram, salt, pepper and nutmeg and serve.
