Description

These cookies with macadamia nuts and cranberries are a delicious cookie snack that can be prepared quickly in the Thermomix®. The main ingredients are margarine, brown sugar, eggs, flour and macadamia nuts. In just 42 minutes, about 20 servings are created. Ideal as finger food with coffee, as a dessert or for the winter coffee table.

Ingredients (10 ingredients)

  • 125 g Margarine
  • 125 g Brown sugar
  • 1 Egg
  • 175 g Flour
  • 1 TL Baking powder
  • 1 Prise Iodized salt
  • 100 g White chocolate
  • 75 g Macadamia nuts (also like salted)
  • 30 g Dried cranberries
  • Baking paper

Preparation (6 steps)

Mix margarine, sugar and egg

Thermomix® Setting
20 sec/Speed 4

Put 125 g margarine, 125 g brown sugar and 1 egg into the mixing bowl and mix for 20 sec/speed 4 until a homogeneous mixture is formed. If necessary, use the spatula to push down from the edge.

Mix flour, baking powder and salt

15 sec/Speed 3

Put 175 g flour, 1 tsp baking powder and 1 pinch of iodized salt into the mixing bowl and mix for 15 sec/speed 3. If necessary, use the spatula to push down from the edge.

Stir in dry ingredients

20 sec/Speed 3

Add the flour mixture to the remaining ingredients in the mixing bowl and stir in for 20 sec/speed 3. If necessary, use the spatula to push down from the edge.

Prepare chocolate and nuts

Roughly chop 100 g white chocolate and 75 g macadamia nuts. Prepare the chopped chocolate and nuts together with 30 g dried cranberries.

Fold in chocolate, nuts and cranberries

Thermomix® Setting
10 sec/Linkslauf/Speed 2 Reverse

Add the chopped chocolate, macadamia nuts and cranberries to the mixing bowl and fold in for 10 sec/reverse rotation/speed 2. Help with the spatula.

Shape and bake cookies

Preheat the oven to 200 °C (fan oven: 180 °C). Place spoonfuls of dough with a distance on baking trays lined with baking paper, press down a little with the back of a knife or your hand as desired. Bake the chocolate cookies in the preheated oven for 12-17 minutes until light brown. The chocolate cookies may still be a little soft when they come out of the oven. Let cool on the sheet.
