Description

These Summer Berry Dessert Cups are a delightful treat, perfect for a light and refreshing dessert on a warm day. I've been making this recipe for years, and it's always a hit! The combination of fresh berries, creamy mascarpone, and a hint of peach iced tea creates a wonderful flavor profile. It's so easy to prepare, making it ideal for a quick dessert when you have guests. The ladyfingers soaked in peach tea add a unique twist to the classic tiramisu. Ingredients (14 ingredients)

  • 0.25 cup white sugar, divided
  • 0.25 cup Pinot Grigio wine, divided
  • 3 piece strawberries, sliced
  • 3 piece blueberries
  • 3 piece raspberries
  • 1 tsp freshly squeezed orange juice
  • 0.5 cup mascarpone cheese
  • 0.25 cup heavy whipping cream
  • 2 tablespoons white sugar
  • 1 tablespoon vanilla extract
  • 0.5 cup strong peach-flavored iced tea
  • 10 piece ladyfinger cookies, broken in half
  • 1 tablespoon grated white chocolate (Optional)
  • 1 tablespoon confectioners' sugar (Optional)

Preparation (6 steps)

Prepare Berry Mixture

In a small bowl, combine ¼ cup white sugar, 2 tablespoons Pinot Grigio wine, 3 sliced strawberries, 3 blueberries, 3 raspberries, and 1 teaspoon freshly squeezed orange juice. Toss gently to coat the berries. Set aside.

Make Mascarpone Cream

Thermomix® Setting

Place ½ cup mascarpone cheese and ¼ cup heavy whipping cream into the mixing bowl. Insert the butterfly whisk. Add 2 tablespoons white sugar and 1 tablespoon vanilla extract. Mix for 2 Min./Stufe 3.5 until creamy and smooth.

Prepare Peach Tea Mixture

In a separate bowl, mix the remaining 2 tablespoons Pinot Grigio wine and ½ cup strong peach-flavored iced tea together. Set aside.

Soak Ladyfingers

Dip each of the 10 ladyfinger cookies (broken in half) in the peach tea mixture once until coated but not extra soggy. Set aside.

Assemble Dessert Cups

Spoon a dollop of the mascarpone cream onto the bottom of a serving cup. Arrange a few soaked ladyfingers to cover the bottom. Layer berries on top. Dollop on more mascarpone cream. Repeat to make a second layer. Repeat with each serving cup.

Chill and Serve

Rap the bottom of each cup against the counter to expel excess air bubbles. Cover cups with plastic wrap; refrigerate tiramisu until cool and firm, 8 hours to overnight. Dust tops with 1 tablespoon grated white chocolate and 1 tablespoon confectioners' sugar before serving (optional).
