Description

This hearty tomato soup with rice and small sausage dumplings is a real feel-good dish! I especially like to make it when it's cold outside. The combination of the fruity tomato soup, the filling rice and the spicy dumplings is simply unbeatable. The preparation is super easy and thanks to the Thermomix® it's done in a flash. Perfect for a quick lunch or a cozy dinner with the family. If you like, you can add a dollop of crème fraîche or yogurt. An absolute favorite recipe that is always well received by us!

Ingredients (12 ingredients)

  • to taste Salt
  • to taste Pepper
  • Sugar
  • 150 g Long grain rice
  • 250 g Zucchini
  • 1 piece Medium-sized onion
  • 300 g Sausages
  • 2 tbsp Oil
  • 500 g Tomato puree
  • 2 tsp Chicken broth (Instant)
  • 0.5 Töpfchen Basil
  • 1 tbsp Lemon juice

Preparation (9 steps)

Cook rice

Thermomix® Setting
25 min/212°F/Speed 1 100

Put 150 g long grain rice and 500 ml water with 0.5 tsp salt into the simmering basket. Insert the simmering basket into the mixing bowl. Cook for 25 min./100°C/speed 1.

Prepare zucchini

While the rice is cooking, wash 250 g zucchini, pat dry and cut into small cubes.

Chop onion

Thermomix® Setting
3 sec/Speed 5

Peel 1 medium-sized onion, halve and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp oil to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Form and fry sausage dumplings

Squeeze 300 g sausage meat out of the skin and form into small dumplings. Fry the dumplings in a pan with a little oil until brown all over. Set aside.

Add zucchini

Add the zucchini cubes to the onions in the mixing bowl and sauté for 3 min./120°C/speed 1.

Add tomatoes and broth

Thermomix® Setting
3 min/212°F/Speed 1 100

Add 500 g tomato puree, 500 ml water and 2 tsp chicken broth (instant) to the mixing bowl. Cook for 3 min./100°C/speed 1.

Season soup

Add the fried sausage dumplings to the mixing bowl. Season with salt, pepper, a little sugar and 1-2 tbsp lemon juice. Heat for 1 min./100°C/reverse direction speed 1.

Add basil and serve

Wash ½ pot basil, shake dry and cut into strips. Add the cooked rice and basil to the soup and serve.
