Description

This savory ground meat vegetable soup is real soul food! I especially like to make it when I need something quick and still want something warm and hearty on the table. The ground meat provides a filling base, while the vegetables and soy sprouts add a fresh touch. The soup is super variable - depending on what the fridge has to offer, you can also use other vegetables. With a dollop of sour cream and some Sambal Oelek, it becomes really delicious. Perfect for cold days or just when you feel like an uncomplicated meal!

Ingredients (11 ingredients)

  • 1 kg Ground meat mixed
  • 1 bunch Spring onions
  • 2 piece Carrots
  • 2 can Soy sprouts
  • 2 can Cream of tomato soup
  • 2 can Glass noodle soup
  • 1 container Cream
  • 1 container Sour cream
  • to taste Salt
  • to taste Pepper
  • to taste Sambal Oelek

Preparation (5 steps)

Prepare spring onions and carrots

Clean the spring onions and cut into fine rings. Peel the carrots and cut into fine strips. Set both aside.

Fry ground meat

Fry the ground meat mixture in a pan until crumbly. Season with salt and pepper.

Sauté vegetables

Add the fried ground meat, spring onions and carrot strips to the mixing bowl and sauté for 3 min./120°C/speed 1.

Simmer soup

10 min/212°F/Speed 1 Linkslauf 100 Reverse

Add the soy sprouts, cream of tomato soup and glass noodle soup to the mixing bowl and simmer for 10 min./100°C/speed 1 reverse.

Refine soup

Thermomix® Setting
1 min/194°F/Speed 1 Linkslauf 90 Reverse

Add cream and sour cream to the mixing bowl and stir in for 1 min./90°C/speed 1 reverse. Season with Sambal Oelek.
