Description

This Algerian couscous is a family dish par excellence, rich in flavors and textures. I often prepare it for special occasions, because it is both convivial and comforting. Lamb, chicken and merguez go wonderfully with vegetables and fragrant spices. The secret lies in the slow and gentle cooking, which allows the aromas to develop fully. A true gustatory journey to the heart of Algeria, perfect for warming up autumn and winter evenings. Feel free to adjust the spices according to your preferences and add other seasonal vegetables!

Ingredients (24 ingredients)

  • 0.5 c à cde Four spices
  • 1 c à c Pepper
  • 0.5 c à c Saffron powder
  • 1 c à s Butter
  • 1 c à c Ginger
  • to taste Salt
  • 1 c à c Paprika
  • 1 c à c Tomato paste
  • 4 c à s Oil
  • 2 piece Tomatoes
  • 2 piece Carrots
  • 2 piece Long zucchini
  • 2 piece Turnip
  • 1 bunch Parsley
  • 1 poignée Chickpeas soaked the day before
  • Pieces of lamb meat (collar)
  • Chicken meat
  • Merguez
  • 1 bunch Coriander
  • 2 bâton Cinnamon
  • 200 g Raisins
  • 2 piece Onions
  • 1 branche Celery
  • 750 g Fine couscous

Preparation of the couscous base

Thermomix® Setting
20 min/212°F/Speed 1/Linkslauf 100 Reverse

In the Thermomix bowl, put 1 good tablespoon of butter, the washed and cut pieces of lamb meat, 1 handful of chickpeas soaked the day before, 2.5 liters of water, 1/2 teaspoon of four spices, 1 teaspoon of pepper, 1/2 teaspoon of saffron powder, 1 teaspoon of ginger, salt, 1 teaspoon paprika, 1 teaspoon of tomato paste, 1 whole bunch of parsley previously washed, 1 whole bunch of coriander previously washed, 2 minced onions and 1 branch of celery cut into pieces. Close the bowl and cook for 20 Min./100°C/Stufe 1/Linkslauf.

Adding chicken and vegetables

Thermomix® Setting
10 min/212°F/Speed 1/Linkslauf 100 Reverse

Then add the pieces of chicken meat to the bowl and cook for 10 Min./100°C/Stufe 1/Linkslauf. Add the 2 carrots cut into rounds, the 2 turnips cut into pieces, the 200g of raisins and the tomato paste. Cook for 10 Min./100°C/Stufe 1/Linkslauf more. Add the 2 long zucchini cut into pieces and check the amount of water and salt. Let simmer quietly.

Final cooking of the vegetables

Thermomix® Setting
10 min/212°F/Speed 1/Linkslauf 100 Reverse

Cook for 10 Min./100°C/Stufe 1/Linkslauf more. Add the 2 long zucchini cut into pieces and check the amount of water and salt. Let simmer quietly.

Initial preparation of the couscous

Put the couscous in a colander and rinse quickly and drain. Put it in a large container to be able to work it easily. Add 2 tablespoons of oil and work with your hands and rub it. Continue until there are no more lumps and let it rest at room temperature for 10 min.

First steaming

Thermomix® Setting
15 min/Varoma/Speed 1 Varoma

Put 500 ml of water in the Thermomix bowl. Place the couscous in the Varoma and place it on the Thermomix. Steam for 15 Min./Varoma/Stufe 1 (wait until the steam escapes from the small holes).

First mixing and hydration of the couscous

Put back in the gasaa (large round dish) and work the couscous with a wooden spoon. Add the equivalent of a glass of water with salt to this couscous gradually, while working it at the beginning with the wooden spoon or with your hands if possible.

Second steaming

15 min/Varoma/Speed 1 Varoma

Let it rest a little and put 500 ml of water back into the Thermomix bowl. Place the couscous in the Varoma and place it on the Thermomix. Steam for 15 Min./Varoma/Stufe 1.

Second mixing and hydration of the couscous

Remove, and repeat the same operation with a glass of water. Continue to work your couscous delicately.

Third steaming

Let it rest and put 500 ml of water back into the Thermomix bowl. Place the couscous in the Varoma and place it on the Thermomix. Steam for 15 Min./Varoma/Stufe 1.

Finalization of the couscous

Work the couscous with two spoons of olive oil.

Service

Pour the couscous into a large dish and stir, add a little salted butter (or olive oil). In a tureen, present the broth with the chickpeas. In another dish, arrange the meats and vegetables.
